In a large salad bowl season romaine, tomatoes and basil with salt. Toss in croutons and bocconcini. Toss with olive oil. Drizzle with balsamic glaze, start with one tablespoon and add more as needed.

Healthy Bruschetta Salad

oz cherry tomatoes ((quartered))

garlic ((smashed

TBSP red wine vinegar

lemon, juiced

TBSP fresh chopped basil

Italian seasoning blend

sea salt and black pepper (to taste)

green leaf lettuce

TBSP balsamic glaze (or favorite balsamic vinegar/dressing)

First marinated the tomatoes. Quarter your cherry tomatoes and mince garlic. Using the flat side of your knife, smash peeled garlic and mince into a paste. Season with a pinch of salt and add to a bowl with your veggies.

Add olive oil, vinegar, lemon juice, basil, Italian seasoning, and freshly cracked black pepper. Mix to coat the tomatoes and allow to sit at room temperature for 30 minutes (or longer if needed/desired), sitring occasionally. Feel free to adjust salt and pepper to taste.

Bruschetta Pasta Salad

orecchiette

c. extra-virgin olive oil

tbsp. balsamic vinegar

pt. cherry tomatoes, preferably multi-colored, halved

c. torn basil, for garnish

In a large pot of salted boiling water, cook orecchiette according to package directions until al dente. Drain and set aside.

In a small bowl, whisk together olive oil and balsamic vinegar, then season with salt and pepper.

To bowl, add pasta, garlic and tomatoes; toss with dressing to combine.

So, I made this and it tasted great when I immediately tried it. I put it in the fridge until it was time to take it to the cookout I went to and it soaked up all the dressing by the time I got there and it was bland. Next time I'll wait until ready to serve to add the dressing.

I made it with sausage and it was delicious. I also added some salt and pepper to taste . Overall, a great recipe very easy to make.

My daughter prepared this for my grandson's birthday party yesterday. It was Delish! I made her give me the recipe.

I liked this but thought the orecchiette pasta was kind of thick and chewy. Wonder if a more tender pasta would be better.
