You&#x27;ll love these easy to make and DELICIOUS buckeyes, creamy, perfectly sweet peanut butter balls dipped in chocolate.

Buckeyes

peanut butter (smooth, 240 grams)

tbsp unsalted butter (70 grams)

sugar (240 grams)

tsp vanilla extract (5 milliliters)

semisweet chocolate (340 grams)

tbsp coconut oil (30 milliliters, optional)

Cream the peanut butter and butter together with the vanilla extract.

Add powdered sugar and mix on low until combined. Scrape down bowl and mix again.

Pinch off tablespoon sized pieces and roll into balls. About 20g if you&#x27;re weighing.

Transfer balls to a baking sheet and chill until firm. At least 20 minutes.

Add chocolate and coconut oil to a medium bowl and melt on 50% power in the microwave. Stir to combine and set aside to cool to room temperature.

Use a skewer or toothpick to dip the peanut butter balls into the chocolate. Leave a bit of the peanut butter exposed for that signature buckeye pea look.

Chill to allow the chocolate to firm up and enjoy. If you want to remove the holes left from the skewers, run a small knife or spatula over the tops.

Buckeyes are like peanut butter balls that didn’t get all the way dipped in chocolate. They’re no bake, SUPER-EASY to make and ultra snackable. As an added bonus you can make them in advance and pull them out of the fridge at a moment’s notice.

Easy Buckeyes Recipe

AKA peanut butter cookie dough, buckeye fudge ice cream...aka THE BEST!

Buckeye Fudge Ice Cream.

heavy cream

sweetened condensed milk (14)

cocoa powder

vanilla extract

chocolate chips

flaky sea salt

peanut butter

butter (softened)

sugar

Add the heavy cream, 7 ounces (about half the can) sweetened condensed milk, cocoa powder and vanilla to the bowl of a stand mixer fitted with the whisk attachment (or use a hand held electric mixer). Whip until stiff peaks form.

Combine the remaining sweetened condensed milk and the chocolate chips in a microwave safe bowl and microwave on power level high for 30 seconds intervals, stirring after each interval until melted and smooth.

Stir in a pinch of salt.

In a separate mixing bowl, beat together the peanut butter, butter, and powdered sugar until smooth. Roll the peanut butter mix into small marble size balls and then carefully stir them into the ice cream. You may not need to use all the peanut butter. Now gently swirl in the fudge sauce.

Spoon the ice cream into a freezer safe container and freeze 4-6 hours or overnight.

I call these bars "lazy" because you use a boxed brownie mix. But if you have your own recipe and aren't feeling lazy (like me) then use your own! This recipe is all over Pinterest. I made them the other day and my peanut butter lovers here couldn't get enough! 

They are scrumptious.
