No-Bake Peanut Butter Balls Recipe (Best Ever Buckeye Candy!)

In the bowl of an electric mixer, add the peanut butter, ½ cup softened butter, vanilla, salt, and cinnamon. Beat on high until the mixture is very smooth. Scrape the bowl with a rubber spatula. Then turn the mixer on low and slowly add in the powdered sugar. If the mixture seems too sticky to roll after adding 3 ½ cups, add another ½ cup of powdered sugar. Beat until smooth.

Set out a large baking sheet lined with parchment paper or wax paper. Scoop the peanut butter ball batter with a spoon and roll into 1 inch balls. Try to make them all the same size. Place on the baking sheet.

Place the baking sheet in the freezer for at least 1 hour, or until the balls are frozen hard.

Once the balls are very cold and stiff, place the chocolate chips and remaining 1 tablespoon butter, in a microwave-safe bowl. Microwave in one-minute increments, stirring in between, until the chocolate is melted and smooth. (You can also melt the chocolate in a small sauce pan over low heat.)

Take several of the balls out of the freezer at a time, leaving the rest to stay cold. Insert a toothpick into the top of a peanut butter ball, and dunk it in chocolate, leaving an open rim around the top so the peanut butter ball is exposed. Gently tap the buckeye on the edge of the bowl to remove excess chocolate, then place the ball back on the frozen baking sheet. Use the tip of your finger to tap down the toothpick hole. Repeat, repeat, repeat, making sure to leave the peanut butter balls in the freezer as long as possible. If they thaw, they are harder to dip. You may also need to rewarm the chocolate once or twice, so it stays thin enough to dip.

Once all the buckeye candy is coated in chocolate, you can choose to keep them in the freeze, or let them thaw to room temperature, so they are soft. Either way, move them to an airtight container.

Add the peanut butter, butter, and vanilla to a large bowl or stand mixer and cream together for 30 seconds.

Sift 3 cups of the powdered sugar into the bowl and beat until smooth. If the mixture is still too soft, beat in an additional 1/2 cup. The mixture should stick together but not be sticky, moore of a set fudge texture.

Chill the mixture in the refrigerator for 30 minutes.

Line a cookie sheet with parchment paper and portion the peanut butter mixture out with a medium cookie scoop and roll into balls. Place them on the cookie sheet and chill in the freezer for 20 to 30 minutes.

Just before removing the balls from the freezer, melt the chocolate melting wafers in a wide glass on 30-second intervals, stirring between each, until fully melted.

Use a toothpick to spear the balls and dip them in the melted chocolate. Use a fork to help remove the toothpick from the ball and place back on the parchment paper.

Use your finger or a paring knife to lightly cover the hole from the toothpick.

Allow to set until the chocolate hardens.

Line a baking sheet with parchment paper. Scoop the peanut butter mixture into Tablespoon-sized balls onto the parchment paper. Roll them between your palms until they are round and smooth, then place them back on the parchment paper. Freeze for 20 minutes (but no more than 30 minutes).

Meanwhile, melt the chocolate wafers in the microwave using short 20-second bursts of heat, stirring between each burst until melted and smooth.

Cream butter and peanut butter together until smooth and completely combined, about 2 minutes.

Beat in the vanilla extract and salt.

Add 1 1/2 cups powdered sugar and mix on low speed until mostly combined and then increase the speed to high for one minute. Repeat twice more with 1 cup of powdered sugar each time. The mixture should be smooth, a little bit crumbly and should not stick to your fingers when you pick it up.

Scoop mixture, roll into 1 inch balls and place on prepared baking sheet.

Freeze balls for 30 minutes or until very firm. You can also refrigerate for 2 hours if freezer space is unavailable.

When peanut butter balls are just about ready, prepare the chocolate coating.

Combine chocolate melting wafers and chocolate chips in a shallow, microwave safe bowl and melt in the microwave in 30 second increments, at 50% power, stirring in between, until chocolate is fully melted and smooth. Be careful not to overheat the chocolate mixture.

Using toothpicks or wooden skewers, carefully dip the peanut butter balls into the melted chocolate leaving the top of the ball free of chocolate.

Wipe off excess chocolate on the side of the bowl and return the peanut butter balls to the parchment lined baking sheet.

Carefully twist the toothpick or skewer to remove. Smooth over the hole with additional peanut butter mixture or a slightly wet finger, or leave as is.

Repeat with remaining peanut butter balls until all balls have been dipped.

Let buckeyes sit until the chocolate has set up. Refrigerate buckeyes until ready to enjoy.
