buckeye candy

An easy no-bake recipe for the best classic Buckeyes, a beloved candy made of creamy, rich peanut butter balls dipped in chocolate.

No-Bake Peanut Butter Balls Recipe (Best Ever Buckeye Candy!)

peanut butter

butter (+ 1 tablespoon for chocolate)

vanilla extract

salt

cinnamon (optional)

½ powdered sugar

chocolate chips

In the bowl of an electric mixer, add the peanut butter, ½ cup softened butter, vanilla, salt, and cinnamon. Beat on high until the mixture is very smooth. Scrape the bowl with a rubber spatula. Then turn the mixer on low and slowly add in the powdered sugar. If the mixture seems too sticky to roll after adding 3 ½ cups, add another ½ cup of powdered sugar. Beat until smooth.

Set out a large baking sheet lined with parchment paper or wax paper. Scoop the peanut butter ball batter with a spoon and roll into 1 inch balls. Try to make them all the same size. Place on the baking sheet.

Place the baking sheet in the freezer for at least 1 hour, or until the balls are frozen hard.

Once the balls are very cold and stiff, place the chocolate chips and remaining 1 tablespoon butter, in a microwave-safe bowl. Microwave in one-minute increments, stirring in between, until the chocolate is melted and smooth. (You can also melt the chocolate in a small sauce pan over low heat.)

Take several of the balls out of the freezer at a time, leaving the rest to stay cold. Insert a toothpick into the top of a peanut butter ball, and dunk it in chocolate, leaving an open rim around the top so the peanut butter ball is exposed. Gently tap the buckeye on the edge of the bowl to remove excess chocolate, then place the ball back on the frozen baking sheet. Use the tip of your finger to tap down the toothpick hole. Repeat, repeat, repeat, making sure to leave the peanut butter balls in the freezer as long as possible. If they thaw, they are harder to dip. You may also need to rewarm the chocolate once or twice, so it stays thin enough to dip.

Once all the buckeye candy is coated in chocolate, you can choose to keep them in the freeze, or let them thaw to room temperature, so they are soft. Either way, move them to an airtight container.

Easy Buckeye Candy Recipe

peanut butter ((356 grams))

salted butter ((113 grams))

sugar ((360 grams))

Ghiradelli dark chocolate melting wafers

Beat the peanut butter and butter together in a large bowl until creamy.

Add the powdered sugar and vanilla, then beat again until combined. Stop and scrape the bottom and sides of the bowl.

Line a baking sheet with parchment paper. Scoop the peanut butter mixture into Tablespoon-sized balls onto the parchment paper. Roll them between your palms until they are round and smooth, then place them back on the parchment paper. Freeze for 20 minutes (but no more than 30 minutes).

Meanwhile, melt the chocolate wafers in the microwave using short 20-second bursts of heat, stirring between each burst until melted and smooth.

Once the peanut butter balls are well-chilled, remove them from the freezer and skewer one with a toothpick. Dip the peanut butter ball into the melted chocolate until mostly covered, leaving a small round opening on top to give them the appearance of a buckeye ball. Gently shake off excess chocolate so it doesn't pool too much on the baking sheet, then return the buckeye to the baking sheet so the chocolate can set up.

Repeat with the remaining peanut butter balls, then use your fingers or a paring knife to smooth over the toothpick mark. Let the chocolate set up before enjoying.

Buckeyes are the perfect no bake candy to make for the holidays! With a creamy peanut butter center and a sweet chocolate exterior, this easy buckeye recipe is a crowd favorite! Bonus - only a handful of ingredients are needed!

unsalted butter (room temperature)

½ cups creamy peanut butter peanut

milk chocolate melting wafers (I used Ghirardelli)

Line a sheet pan with parchment paper. Set aside.

Cream butter and peanut butter together until smooth and completely combined, about 2 minutes.

Beat in the vanilla extract and salt.

Add 1 1/2 cups powdered sugar and mix on low speed until mostly combined and then increase the speed to high for one minute. Repeat twice more with 1 cup of powdered sugar each time. The mixture should be smooth, a little bit crumbly and should not stick to your fingers when you pick it up.

Scoop mixture, roll into 1 inch balls and place on prepared baking sheet.

Freeze balls for 30 minutes or until very firm. You can also refrigerate for 2 hours if freezer space is unavailable.

When peanut butter balls are just about ready, prepare the chocolate coating.

Combine chocolate melting wafers and chocolate chips in a shallow, microwave safe bowl and melt in the microwave in 30 second increments, at 50% power, stirring in between, until chocolate is fully melted and smooth. Be careful not to overheat the chocolate mixture.

Using toothpicks or wooden skewers, carefully dip the peanut butter balls into the melted chocolate leaving the top of the ball free of chocolate.

Wipe off excess chocolate on the side of the bowl and return the peanut butter balls to the parchment lined baking sheet.

Carefully twist the toothpick or skewer to remove. Smooth over the hole with additional peanut butter mixture or a slightly wet finger, or leave as is.

Repeat with remaining peanut butter balls until all balls have been dipped.

Let buckeyes sit until the chocolate has set up. Refrigerate buckeyes until ready to enjoy.

Add the chocolate to a microwave-safe measuring cup or bowl; and melt, starting at 30 seconds, then stirring every 15-20 seconds, 'til melted and smooth.

First time making Buckeyes and we loved them. Now I have to make some for my son. This recipe only makes 18 of them. Thanks for sharing

I made these for Christmas presents a few years back and everyone loved them. Even easier than I expected. I’ll make these again and again!!

Very easy to make and turned out perfectly. I took them to an Ohio State football party and everyone loved them.

Too gooey, couldn't form into balls, had to add more powdered sugar

Being from Indiana, the original “Buckeyes” have rice crispies in them. Really brings them up a notch!

Idk how you formed balls with a 1:2 ratio of peanut butter to powdered sugar. Recipe isn’t right . with this ratio I had gooey balls that wouldn’t hold shape or stick together . I had I add an extra 1/2 cup of powered sugar.
