Crunchy No Bake Peanut Butter Balls made with puffed quinoa are the perfect sweet treat! They're the perfect vegan + gluten free snack!

Peanut Butter Crunch Balls

peanut butter

agave nectar

vanilla extract

almond flour

sea salt

puffed quinoa

Whisk together the natural peanut butter, agave nectar (honey or maple syrup works), and vanilla.

Whisk it or fold it together until completely combined.

Use a cookie scooper to scoop the balls and keep them uniform.

Then, roll them between your hands to make them smooth.

If desired, melt chocolate chips and dip each ball into the chips.

Place them on a cutting board or baking sheet lined with piece of parchment paper and store in the fridge for the chocolate to harden.

Hi there! I made these and they are so good! Mine didn’t “set up” like it looks like they should have...do you think it is because I puffed my own quinoa (not very successfully) haha? ... or do you think it could be that I didn’t use natural peanut butter?

The buckeyes are a classic treat that just screams home cooking. They have a delicious and unique flavor, which is slightly nutty and sweet at the same time. Buckeyes

butter (softened)

confectioners’ sugar (sifted)

chocolate

shortening

Line a baking sheet with waxed paper; set aside.

In a medium bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar with hands to form a smooth stiff dough.

Shape into balls using 2 teaspoons of dough for each ball and insert a wooden toothpick into the ball. Place on prepared pan, and refrigerate for at least 1 hour.

Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.

Remove peanut butter balls from the refrigerator. Dip into melted chocolate leaving a small uncovered area so balls resemble buckeyes. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set. Use fingers to blend in toothpick holes.
