Try this delicious twist on the classic holiday candy -- a decadent chocolate chunk cookie topped with creamy peanut butter and smooth chocolate ganache. A definite WOW!

Buckeye Cookies

pouch (17.5 oz) Betty Crocker™ double chocolate chunk cookie mix

Butter, water and egg called

peanut butter

sugar

vanilla

chocolate chips

heavy whipping cream

In large bowl, stir cookie mix, butter, water and egg until soft dough forms.

Drop dough by slightly rounded tablespoons 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until edges are set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.

Meanwhile, in small bowl, mix peanut butter, powdered sugar and vanilla until well blended. Spread about 1 teaspoon mixture on top center of each cookie.

In small microwavable bowl, microwave chocolate chips and cream uncovered on High 30 to 45 seconds; stir until smooth. Spoon generous teaspoonful on each cookie; spread gently over peanut butter layer. Allow chocolate to set until firm, about 1 hour. Store covered in refrigerator.

Peanut Butter Crunch Balls

agave nectar

vanilla extract

almond flour

sea salt

puffed quinoa

Whisk together the natural peanut butter, agave nectar (honey or maple syrup works), and vanilla.

Whisk it or fold it together until completely combined.

Use a cookie scooper to scoop the balls and keep them uniform.

Then, roll them between your hands to make them smooth.

If desired, melt chocolate chips and dip each ball into the chips.

Place them on a cutting board or baking sheet lined with piece of parchment paper and store in the fridge for the chocolate to harden.

Hi there! I made these and they are so good! Mine didn’t “set up” like it looks like they should have...do you think it is because I puffed my own quinoa (not very successfully) haha? ... or do you think it could be that I didn’t use natural peanut butter?
