Buckwheat is the perfect gluten-free salad grain for this delicious Mediterranean Salad.

Mediterranean Buckwheat Salad

buckwheat groats

water

red onion (diced)

cherry tomatoes

cucumber (chopped)

kalamata olives

yellow or orange bell pepper (seeded and chopped)

olive oil

lemon

tsp sea salt

oregano

feta cheese (optional)

parsley

In a saucepan, bring buckwheat and water to a boil

Turn heat to low, cover, and simmer about 20 minutes

Remove from heat and let stand covered, for 5 minutes. Fluff with a fork and allow to cool

Combine cooled groats with tomato, cucumber, olives, and bell pepper in a salad bowl

in a small bowl, whisk together olive oil, lemon juice, salt, and oregano

Pour dressing on the salad and toss to combine

Garnish with parsley and feta cheese, if using

Mediterranean Buckwheat Salad is quick, easy, and delicious. Loaded with superfood buckwheat, this salad is healthy, naturally gluten-free, and vegetarian.

Buckwheat Salad

buckwheat, uncooked

grape tomatoes (or cherry tomatoes), halved

mini cucumbers, sliced (about 3-4 mini cucumbers)

red onion, diced

feta cheese, cubed

lemon, juiced

sea salt (or more to taste)

black pepper

Rinse the buckwheat and place in a small saucepan. Add water and a pinch of salt and bring to a boil over high heat. Turn the heat down to low, cover, and simmer for 15-20 minutes until cooked. Let it sit for 5 minutes and then fluff with a fork. If the water has not all been absorbed, drain the buckwheat in a colander. Set aside and let it cool completely.

Transfer the cooled buckwheat to a large mixing bowl or serving bowl. Add all the remaining ingredients, and toss to combine. Taste and season with more salt and pepper, if needed.

Serve with extra parsley or mint on top (optional).
