A quick and easy beef potato hash meal prep that’s high in protein, budget-friendly, and perfect for the week. Ready in under 40 minutes and reheats perfectly.

Beef Potato Hash Meal Prep

Tbsp (40 milliliters) - Olive Oil (Divided)

1kg (2.2lb) - Beef Mince (90/10 Fat)

Potato,

Brown Onions, Diced

Garlic Cloves, Grated

Smoked Paprika

Worcestershire Sauce

(4.2 ounces)

Salt & Pepper

Cup (220 grams)

Garlic Clove, Grated

Lemon, Juiced

Roast sweet potato

Preheat oven to 220°C fan. Toss diced sweet potato with one tablespoon (20ml) of olive oil, then season with salt &amp; pepper. Spread on a lined baking tray and roast for 25–30 minutes, flipping halfway through until golden.

Heat the remaining one tablespoon (15ml) of olive oil in a large pan over medium-high heat. Add onions and sauté for 3–4 minutes until softened. Add the garlic and cook for 1 minute.

Add beef mince, season with salt &amp; pepper. Cook for 6-8 minutes, breaking the mixture apart, until it is browned and the moisture has evaporated.

Stir in smoked paprika, thyme, oregano, Worcestershire and cook for 1-2 minutes.

Add the sweet potato to the beef mince and mix everything well until combined, or leave it separate. Add in the spinach and cook for 1-2 minutes or until wilted. Check and adjust seasoning, remove from the heat.

Cook the Beef Hash

Add all the ingredients to a bowl and mix until well combined. Check and adjust seasoning to taste. Store in the fridge until ready to serve.

Yogurt Garlic Sauce

This creamy pesto chicken meal prep is fast, flavourful, and built for the week ahead. Served with fluffy couscous and wilted spinach, it’s high in protein, easy to reheat, and made with just 13 simple ingredients.

Creamy Pesto Chicken

(1.9lb) - Chicken Breast, Diced

tsp (4 grams) - Garlic Powder (Optional)

tsp (4 grams) - Smoked Paprika (Optional)

Basil Pesto

(10.9 ounces) Dry Couscous

¼ Cups (310 milliliters) - Chicken Stock

Tbsp (20 milliliters) - Extra Virgin Olive Oil

(4.2 ounces) - Baby Spinach

¼ Lemon, Juiced

Parmesan

Lemon Wedge

Pesto

Cook the Chicken

Place a large pan over medium-high heat. Add in olive oil and chicken. Season with salt, pepper, and optional spices, then sear for 5-6 minutes or until cooked through. Turn off the heat and add in the pesto. Mix well to combine. Add in the high-protein yogurt and mix well. Remove from the stovetop.

Make the Couscous

In a saucepan, bring the chicken stock to a boil, then turn off the heat. Add in the couscous and a pinch of salt and pepper, and cover with a lid. Steam for 5-6 minutes or as per the packet instructions. Remove the lid and add in the baby spinach, extra virgin olive oil and salt and pepper. Mix well and allow the residual heat to wilt the spinach. If need be, place it over a medium heat and mix well until wilted. Add in lemon juice to taste.

Assemble Your Containers

In 5x 750ml containers, place the couscous first as a bed and add the chicken over the top. Garnish with freshly grated parmesan cheese, cracked black pepper and a lemon wedge. Dig in.
