Creamy Buffalo Chicken Pasta Recipe made with juicy chunks of chicken, diced onion, cream cheese, hot sauce, and loads of shredded cheese. Ready in just 30 minutes and just as delicious as your favorite buffalo chicken dip.

Buffalo Chicken Pasta Recipe

lb pasta ((I used cellentani pasta))

olive oil

onion

garlic (minced)

salt and pepper (to season)

butter

(8 oz) package cream cheese (softened)

chicken broth

Frank's Red Hot Sauce (divided)

Ranch dressing ((or Blue Cheese))

chicken breast

mozzarella cheese (shredded)

cheddar cheese (shredded)

ricotta cheese (optional)

Preheat oven to 375 degrees F. Spray a large baking dish with nonstick cooking spray and set aside.

Cook the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1-2 cups of the salted pasta water; drain well.

Prepare the cream sauce. As the noodles are cooking, add the olive oil to a large pan or Dutch oven over medium heat. Add the onion and cook, stirring often, for 4-5 minutes, or until soft and translucent. Add the garlic, salt, and pepper, mixing well to combine. Cook for 1 minute. Add the butter, cream cheese, chicken broth, hot sauce, and Ranch dressing to the onions. Mix continuously until cream cheese is melted.

Add the chicken. Add the cooked chicken to the sauce and mix to combine.

Add the cheese and cooked noodles. Add one cup of the cheddar cheese and one cup of the mozzarella cheese to the pot. Mix thoroughly to combine. Gently fold in the cooked and drained noodles. NOTE: If your sauce is thicker than you&#039;d like, thin using the reserved pasta water from step 1. Start with approximately half a cup and add more as needed.

Transfer to prepared baking dish. Season with additional salt, pepper, or hot sauce, to taste then transfer the chicken and pasta mixture to your prepared baking dish. Top with spoonfuls of ricotta cheese, chopped green onions, and sprinkle with the remaining shredded cheese. Drizzle with additional hot sauce or Ranch dressing, if desired.

Bake. Transfer to your preheated oven and bake for 15-25 minutes, or until cheese is melted and bubbly.

Serve garnished with additional green onion, hot sauce, or Ranch dressing, if desired.

Buffalo chicken pasta is creamy, rich, tangy and spicy. It&#039;s a perfect dish for a crowd, gathering or a flavor-packed dinner.

Buffalo Chicken Pasta

unsalted butter (melted)

Ritz crackers (about 1 sleeve of crackers)

Penne pasta (regular

garlic (peeled and finely minced)

salt

black pepper

chicken

cream cheese

Mozzarella cheese

cheddar cheese

green onions

Ranch Dressing or Blue Cheese dressing (optional)

Preheat the oven to 375 degrees Fahrenheit. Spray a 9-inch by 13-inch baking dish or casserole with non-stick food spray.

Cook the pasta al dente according to the package instructions., then strain Drain the pasta and rinse it with cold water and set aside.

Stir the melted butter into the cracker crumbs and set aside.

While the pasta is cooking, add the oil to a large pan over medium heat. When hot  add the onion and cook until translucent (aproximately 5 minutes).

Add the garlic, salt and pepper and cook until fragrant (another 1-2 minutes).

Stir in the shredded chicken and hot sauce until the chicken is coated.

Add the cream cheese and stir until it has fully melted.

Sprinkle in the cheese and stir again until melted.

Gently fold in the cooked pasta and stir just until combined. (Do not over stir the pasta or it may start to break down)

Spoon the mixture into the prepared baking dish. Sprinkle the cracker topping evenly over the top of the pasta.

Bake for 15-20 minutes until the topping is golden in color and crisp.

Remove the pan from the oven and let it cool for 5 minutes. Garnish with freshly sliced green onions. Drizzle the top with ranch dressing or blue cheese dressing if desired.

One Pot Skinny Buffalo Chicken Pasta

carrots (shredded)

garlic

tsp kosher salt

olive oil spray

lb pasta (I used the Cellentani shape)

cashew milk (or almond milk)

Frank's Red Hot Sauce

scallions

oz reduced fat cream cheese

chicken breast (cooked, shredded or chopped (about 2 rotisserie chicken breasts))

Chop the onion and mince the garlic.

Add olive oil spray to the bottom of a Dutch oven or large pot, and add the onion and shredded carrots.  Season with the kosher salt.

Cook the onion and carrots over medium heat for about 5-7 minutes or until tender.  Then, add the minced garlic and cook for another minute until fragrant.

Add the entire box of pasta to the pot, followed by the chicken broth and milk.

Stir everything to combine, and bring to a boil.

Once boiling, cover the pot and reduce the heat to simmer.

Simmer covered for about 10-12 minutes or until the pasta is cooked. There will still be some liquid left in the bottom of the pot.

Stir in the cheddar, cream cheese, and hot sauce.

Chop the scallions and the chicken breast and add them in.

Stir to combine all ingredients over a low flame to ensure all flavors combine thoroughly.

This Buffalo Chicken Pizza is easy to make with blue cheese or ranch and delicious toppings like tangy buffalo chicken, banana peppers, red onions, and more.

Buffalo Chicken Pizza

buffalo sauce (plus more to drizzle on top)

blue cheese dressing (divided. Can sub Ranch.)

pizza dough (at room temp)

pizza sauce

mozzarella cheese

red onions (thinly sliced)

banana pepper rings (patted dry)

Parmesan cheese (grated)

garlic powder

Chives/Green Onions

Red Pepper Flakes

Parsley

Preheat oven to 450° F.  Note: If you have a pizza stone, put it in the oven while it preheats for more even cooking and a browner, crisper crust.

Combine the shredded chicken, buffalo sauce, and 1 tablespoon of blue cheese. Let the chicken marinate while you prepare the remaining ingredients.

Spread the dough onto a lightly greased, 12-inch pizza pan (or stone). Poke holes in it with a fork to prevent the crust from bubbling up in the oven.

Top with pizza sauce, then with most of the mozzarella. Add the chicken, onions, and banana peppers, then the remaining mozzarella.

Drizzle with 3 tablespoons of blue cheese, along with 1-2 tablespoons of buffalo sauce.

Bake for 13 minutes and remove from the oven.

Combine the melted butter, Parmesan cheese, and garlic powder. Brush it over the crust of the pizza and return it to the oven.

Bake for 2-3 more minutes, or until the crust begins to brown.

Garnish with green onions, red pepper flakes, and parsley. Slice and serve!

I’ve made this soooo many times and it’s delicious! I do store bought crust and skip the red onion and it’s so quick and easy (im sure it’s quick to make your own crust too, I’m just lazy lol). Def a winner with the fam! 

We tried this for the first time tonight beacaise all of my boys are home for dinner!  We put banana peppers on half to accommodate picky eaters, but everyone agreed this is now a must for pizza night!   

Delish, easy to make, so thankful the spice is not over powering despite the sauce and banana peppers. We used ranch with no complaints
