These baked wings are less messy than their iconic fried counterpart, and taste almost indistinguishable.

Really Good Oven-Fried Buffalo Wings Recipe

(5 grams) baking powder per pound of chicken wings

(5 grams) kosher salt per pound of chicken wings

(1 ounce; 25 grams) unsalted butter per pound of chicken wings

(1 ounce; 30 milliliters) Frank's RedHot Sauce per pound of chicken wings

Line a rimmed baking sheet with aluminum foil and set a wire rack inside. Carefully dry chicken wings with paper towels. In a large bowl, combine wings with baking powder and salt and toss until thoroughly and evenly coated. Place on rack, leaving a slight space between each wing. Repeat with remaining 2 batches of wings.

Place baking sheet with wings in refrigerator and allow to rest, uncovered, at least 8 hours and up to 24 hours.

Adjust oven rack to upper-middle position and preheat oven to 450°F (230°C). Add chicken wings and cook for 20 minutes. Flip wings and continue to cook until crisp and golden brown, 15 to 30 minutes longer, flipping a few more times towards the end.

Meanwhile, combine butter and hot sauce in a small saucepan and cook over medium heat, whisking until combined. Transfer wings to a large bowl, add sauce, and toss to thoroughly coat. Serve wings immediately with blue cheese dressing and celery sticks, conspicuously shunning anyone who says that real Buffalo wings must be fried.

Why relegate Buffalo sauce to chicken wings? Here, we've borrowed those flavors—namely, Frank's Red Hot Sauce and butter—and worked them into a slightly thicker ketchup base. A pinch of celery salt adds a subtle reminder of the carrot and celery sticks typically served with Buffalo wings, while a splash of cider vinegar helps keep the sauce more firmly in the tart zone where it belongs. Not totally unlike Lexington Dip, this is a slightly thinner, vinegary sauce that's meant as more of a topping than a glaze.

Buffalo Barbecue Sauce Recipe

Frank's Red Hot Sauce

ketchup

Worcestershire sauce

unsalted butter

celery salt

In a medium saucepan, combine hot sauce, ketchup, vinegar, Worcestershire sauce, butter, and celery salt. Bring to a low simmer over medium heat, stirring frequently, until butter melts. Continue to gently simmer, stirring, over low heat, until flavors meld and sauce thickens slightly, 5-10 minutes. Season with salt and pepper and serve.

Sous Vide Buffalo Chicken Wings Recipe

Kosher salt

unsalted butter (1 stick; 110 grams)

(235 milliliters) Frank's RedHot Sauce

(2.8L) peanut or canola oil

Set Up the Immersion Circulator: Set up an immersion circulator and preheat the water bath to either 160°F (71°C) if you want fall-off-the-bone wings or 165°F (74°C) if you want juicy and tender wings that still retain some springiness.

Meanwhile, season wings all over with salt. Place wings in zipper-lock bags (you may need multiple bags to easily hold all the wings). Alternatively, slide wings into vacuum bags and seal according to vacuum-sealer manufacturer's instructions. If using zipper-lock bags, seal using the water-displacement method. Add bagged wings to immersion circulator and cook for 2 hours if cooking at 160°F or 1 hour if cooking at 165°F.

Arrange wire racks on rimmed baking sheets. Remove wings from bags and pat dry; discard juices. Arrange wings on wire racks and refrigerate, uncovered, for 8 hours or up to 2 days.

When ready to serve, in a small saucepan, combine butter and Frank's and cook over medium-low heat, stirring occasionally, until butter is completely melted. Transfer to a large bowl.

Meanwhile, in a wok or Dutch oven, heat oil to 400°F (205°C). Working in small batches, carefully add chicken and cook, stirring and flipping occasionally while adjusting heat to maintain a temperature of 375 to 400°F (190 to 205°C), until golden brown and crisp, about 3 minutes per batch. Using a spider or slotted spoon, transfer wings to paper towels to drain. When all the wings have been fried, transfer to bowl with sauce, toss to coat, and serve with blue cheese dressing and celery.

These buffalo cauliflower lettuce wraps are perfect for game day or even a quick weeknight dinner. Roasted cauliflower with buffalo wing sauce, sliced avocado, crumbled blue cheese, scallions, cilantro and chives makes for a flavor explosion!

Roasted Buffalo Cauliflower Lettuce Cups

cauliflower,

olive oil

garlic powder

salt and pepper

buffalo wing sauce, (plus extra for drizzling)

butter lettuce, (leaves removed)

iceberg lettuce, (leaves removed)

avocados, (thinly sliced)

gorgonzola cheese

green onions

cilantro

chives

ranch or blue cheese dressing, (for drizzling)

Preheat the oven to 425 degrees F. Line a baking sheet with foil or parchment paper and put the florets on top. Drizzle with the olive oil, sprinkle with the garlic powder, salt and pepper and toss. Roast for 20 to 25 minutes, or until the florets are golden and the edges crispy.

Remove the florets and drizzle them with the wing sauce. Toss well to combine.

Take the lettuce leaves and place a piece of butter lettuce on top of a piece of iceberg lettuce. I love doing this because it makes the cup more substantial, but it’s not a necessity!

Fill the lettuce cup with a scoop of the buffalo cauliflower. Add in a few slices of avocado. Sprinkle with the gorgonzola, green onions, cilantro and chives. If desired, drizzle with a little bit of ranch or blue cheese dressing. Devour!
