This flavorful Vegan Butter Bean, Pumpkin, Okra Stew is so simple to make and delicious. Butter beans, pumpkin chunks, and okra cooked in a seasoned coconut sauce with a blend of Jamaica herbs and spices, thyme, scallion, pimento, ginger, and Scotch bonnet pepper.

Butter Beans Pumpkin Okra Stew

Salt

Heat oil in a large saucepan over medium-high heat. Add onion, garlic, and ginger and cook stirring occasionally for about 3 minutes. 

Stir in bell pepper, green onion, thyme, allspice, and cook for about one minute.

Stir in vegan bouillon, coconut milk, water, pepper. Cover the saucepan, bring the stew to a boil, and then reduce to simmer for 10 minutes, stirring occasionally. 

Add okra and cook for 10 more minutes until okra is tender and stew is thickened. Add salt to taste.

Our butter bean stew is very easy to make. This tasty vegan recipe is super filling and nutritious and can be made with easy ingredients from the pantry. It's ideal for the autumn or winter as a hearty dish.

Butter bean stew

(15 oz) tomato sauce

garlic,

onion,

paprika

tsp rosemary

yeast

tsp chili powder*

tbsp parsley, chopped

Vegan Delicious Butter bean stew

Heat a little olive

Heat a little olive oil in a deep saucepan. Add the chopped onion and fry for 3-5 minutes until translucent. Add the chopped garlic and the carrot and fry for another 2 minutes.

Add the tomato sauce,

Add the tomato sauce, the paprika, rosemary and chilli and mix well. Bring to a gentle boil, reduce the heat and simmer for 10 minutes.

Add the nutritional yeast

Add the nutritional yeast and the butter beans and simmer for another 5-10 minutes. Taste and add more seasoning (salt, pepper etc) to your preference.

Serve in a bowl

Serve in a bowl with chopped parsley on the top and crusty bread on the side.

How to make Butter bean stew

The quickest, most satisfying lunch or light dinner that’s on the table in just 10 minutes. It’s quick, it’s healthy and it’s very delicious.

Crusty Bread

Add the cherry tomatoes to a pan with a drizzle of olive oil and a pinch of salt. Set it over a medium-high heat and cook for about 5 mins until starting to soften and burst open. Add a splash of water if they’re catching on the bottom of the pan. 

Mince the garlic and add it to the tomatoes in the pan along with the tomato paste, ¾ of the harissa and the smoked paprika.

Add the tinned butterbeans and ½ their liquid to the pan then stir in the vegan cream cheese. Bring the mixture to a boil then turn down the heat and simmer for 5-10 mins until the beans have softened and the broth has thickened (it should be creamy).

Meanwhile, toast the bread and finely chop the herbs.

Ladle the beans into bowls or meal-prep boxes. Drizzle over the tahini and some remaining harissa. Finish with the chopped herbs and flaked almonds. It will keep in the fridge for 3 days.

With all the flavours, I was looking forward to this but it just tasted meh to me. Maybe because it’s not cooked for very long, the flavours just don’t permeate the dish.
