Instant Pot Vegan Butter Chicken With Soy Curls And Chickpeas - Oil-Free

tomatoes tomatoes

water (, use 1 cup if the tomatoes arent very juicy)

soy curls ((dry, not rehydrated))

chickpeas

Cashew cream

tsp sugar

hot green chile (finely chopped,

tsp ginger

cilantro

Instant Pot Vegan Butter Chicken with Soy Curls and Chickpeas - oil-free

Blend the tomatoes, garlic, ginger, chile with water until smooth.

Add pureed tomato mixture to the Instant pot or pressure cooker.  Add soy curls, chickpeas, spices and salt. Close the lid and press manual/pressure cook for 8 to 10 minutes. (6 minutes for stove top pressure cooker). Quick release after 10 minutes. (See notes for Stove top instructions)

Start the IP on saute (medium heat for stove top pressure cooker). Add the cashew cream, garam masala, sweetener and fenugreek leaves and mix in. Bring to a boil, taste and adjust salt, heat, sweet. Add more cayenne and salt if needed. Fold in the chopped green chile, ginger and cilantro and press cancel(take off heat).&nbsp;

At this point you can add some vegan butter or oil for additional buttery flavor.&nbsp;Serve hot over rice or with flatbread or Naan.

Make this creamy, rich vegan butter chickpea dish for under $1 a serving.

turmeric optional (0.01)

Roma tomatoes, diced (0.64)

cashew

non-dairy yogurt (0.15)

lemon juice (0.18)

½ cups cooked chickpeas (0.63)

garam masala (0.07)

coconut sugar (0.01)

Salt (0.01)

Heat the butter and add spices

Heat 1 tablespoon of non-dairy butter or olive oil in a large skillet over medium. Add in the bay leaves, cinnamon, cardamom pods, and cloves. Toast until the spices are fragrant and golden.

Add your ingredients to the pan and simmer

Add in the diced onion and give it a stir, then add in minced ginger, garlic, and chiles. Cook for 1 minute. Add in paprika, turmeric, tomatoes, cashews, non-dairy yogurt, lemon juice, and ½ cup of water. Cover and simmer for 9-10 minutes until the tomatoes are tender.

Blend 

Transfer to a blender and mix on high until smooth. If you don’t have a high-speed blender, strain the mixture or just add it directly back into the pan with 1 more cup of water.

Simmer and enjoy!

Simmer for 5 minutes, then add cooked chickpeas, garam masala, coconut sugar, the rest of the non-dairy butter, and salt to taste. Simmer for another 5 minutes, then serve while warm with a side of rice, naan, cilantro, etc. Enjoy!

This Indian-inspired dish is a healthier, vegan version of Butter Chicken made with whole food, plant-based ingredients. It&#39;s rich, ultra-creamy, and out of this world delicious!

Vegan Butter Chickpeas

yellow onion

can chickpeas

tomatoes

coconut milk (regular, unsweetened)

peanut butter (creamy, natural)

tomato paste

curry powder (1 Tbsp. + 1 tsp.)

smoked paprika

Tbsp. tamari

brown rice (and/or flatbread), cashews, cilantro for garnish

Cook your rice according to package instructions. (Or prepare it ahead of time.)

Dice onion.

In a large skillet over medium-high heat, sauté onion for 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)

When onion is softened, add the curry powder (more/less as desired), garlic powder, and smoked paprika (or other seasonings of choice*). Stir and heat for 1 minute, adding a touch more liquid if necessary.

Rinse and drain chickpeas. Add chickpeas and diced tomatoes (with juice) to skillet. Stir and sauté for 2-3 minutes.

Carefully add coconut milk, peanut butter, and tomato paste. Stir until well combined.

Reduce heat to medium-low and let simmer about 8 minutes, stirring occasionally as the sauce thickens.

Before serving, stir in the tamari.

Serve warm over brown rice, topped with cashews and fresh cilantro if desired.

This recipe has some sort of magical quality to it - when I made it for the first time, my mother (who cannot stand the flavor of curry since childhood) was enticed by the aromas and ate her bowl in silence, then stood up quietly and poured herself another bowl. My mouth dropped. I have since made this recipe many more times, adding diced potatoes in the mix during the onion step, and this recipe has always turned out phenomenal. The greatest moment of this dish occurred the other day when I made this for my 15 member family which includes vegans, meat-eaters, and picky eaters alike, and every single person loved this dish. I saw a picky eater go back for a second bowl!! After a couple of aunts asked for this recipe, I knew I had to let you know how life-changing this recipe has been. Indian Butter Chickpeas

tomato puree (Or unseasoned tomato sauce)

oz full-fat coconut milk

oz chickpeas (can drained or 1.5 cups cooked chickpeas)

garam masala

paprika (or cayenne

sugar

garlic powder ginger

bay leaves, optional

fenugreek leaves, (Kasoori Methi)

non dairy cream, cashew cream or non dairy yogurt

green chilies and lime

In a large skillet over medium heat, add all the ingredients and mix really well. Bring to a boil. Taste and adjust salt and flavor. You can add more garam masala if you like or some ground cumin and ground coriander for additional flavor. (Old spices have much less flavor payoff so you might have to adjust as needed. I use fresh spices and spice blends and often use less than listed)

Continue to cook for another 5-8 minutes to thicken and switch off the heat.

If the sauce is not thickening enough you can add 2 teaspoons of flour mixed with 2 tablespoons of water or 1 teaspoon of cornstarch mixed with 1 tablespoon of water (for gluten-free) and mix it in while it’s still boiling. This will help the sauce thicken faster.

The sauce will thicken more as it cools so you don’t want it too thick while it’s hot.Serve the butter chickpeas garnished with cilantro, lemon juice, and sliced green chilies or with rice or quinoa or flatbread, or naan. You can also add a garnish of non dairy cream.

Move over Butter Chicken! BUTTER CHICKPEAS are Here! (gf, soy-free, nut-free)

An easy recipe for creamy Butter Chickpea Curry made in the slow cooker! This cozy vegetarian dinner is super simple to make using easy to find ingredients. It&#39;s flexible too - you can add spinach, paneer or other ingredients if you wish.

Slow Cooker Butter Chickpea Curry

oz tomato passata (smooth pureed tomatoes)

oz canned chickpeas (drained)

tbsp fresh ginger (grated)

tsp salt

butter

tsp smoked paprika

tsp cumin

tsp coriander

1.5 tsp garam masala

(heavy) cream

lemon wedges (for serving)

cilantro (coriander) (for serving)

Add the tomato passata, salt and chickpeas to the slow cooker and mix through.

Scatter the garlic and ginger over the top.

Place the slices of butter over the top, then add the ground spices on top of the butter.

Cover and cook on LOW for about 1 hour, until the butter is melted and the spices are fragrant.

Open the lid and stir the curry well, getting the spices and butter mixed into the sauce and scraping the sides and the bottom to be sure that the tomato sauce isn&#39;t sticking.

Cover and cook for another 2-3 hours. The first time you make this, it is worth opening the lid and giving it a stir at the halfway point if you can, just to be sure it isn&#39;t sticking. If you see no signs that it&#39;s sticking, then you&#39;ll know for next time that you can leave it cooking without stirring - but all slow cookers are a little different so you want to get to know how your particular model behaves.

Once you&#39;re ready to eat, stir the cream through the pan and cover for another 15 minutes until warmed through - you use this time to prepare your rice and/or naan bread.
