Incredible, vegan "butter chicken style" tofu ready in less than 30 minutes. This is so easy to make for a quick weeknight dinner!

Easy Vegan Butter Chicken

raw cashews + 1/2 cup unsweetened almond milk

tbsp coconut oil (use vegetable stock

tbsp fresh ginger, minced

garlic,

white onion, finely diced

tsp mild chili powder

tsp turmeric

tsp coriander

tsp cumin

cinnamon

tbsp maple syrup

salt and pepper,

Place the raw cashews and almond milk in a high speed blender and mix until completely smooth. Set aside.

In a large pan, heat the coconut oil over medium heat.

Add the ginger, garlic and onion and cook for 5 minutes while stirring.

Add all the spices and cook for a few more minutes.

Add the diced tomatoes, maple syrup, cubed tofu and cashew mixture. Mix well and simmer for 10 minutes.

Love it! I didn't blend the cashews finely enough with the coconut milk, so  the cashew cream was a bit grainy. I'll have to pay more attention to that step next time.

I would double the spices (except the cinnamon) and add a few cardamom seeds.
Reduce the tomato by 1 cup (8 oz.) and add another 1/2 c of the cashew cream.
This tastes much better if the tofu settle sin the sauce for at least a couple of hours or overnight.
Also, because of the absence of most of the ingredients that make butter chicken, butter chicken - I'd call it something else, because it really doesn't taste like butter chicken.  It's a tasty veg. dish for sure, but don't expect it to satisfy your craving for something that's usually loaded with cream, butter and chicken.

This recipe is SO GOOD and one of our family favorites. I've made it multiple times and this is what makes it the best for us - bring cashews to a boil and let them sit in hot water while the tofu presses. Rinse and add 1/2 cup more water than the recipe calls for in the blender and it makes a delightfully creamy sauce with minimal time. I use 15oz can of tomatoes and since we're not vegan I also add about 2-3 tbsp of real butter to the sauce while everything simmers. The flavor is DELICIOUS! Thank you for sharing.

Ah one of my favourite recipes, we do this fairly often and enjoy it every time! I tend to do extra coriander and chilli, and let it simmer a bit longer. If the texture of the tofu is too soft, I'd recommend baking it first :)
Also great for lunch the next day

My family loved this! The only changes I made were to add 3/4 tsp salt to the curry on the 6th step, and to coat the tofu in 3 tbsp soy sauce, and 2 tbsp cornstarch and then bake the pieces at 350°C for 20 minutes (flipping halfway though). Thanks for the great recipe Deryn!

This golden and delicious Buttery Lemon Tofu can be flavored with anything you like or have at hand. Some hot chilies, capers, olives, or anything you want!

Buttery Lemon Tofu

soy sauce

lemon juice

turmeric

Flora salted vegan butter

onion

asparagus

Turn the tofu onto its side lengthwise and cut it into slices. Then, cut those slices into 2 triangles. This should yield about 16 triangles.

In a small bowl, whisk together the soy sauce, lemon juice, and turmeric. Set aside.

In a large frying pan over medium-high heat, heat the Flora vegan butter. Add the onion and asparagus and saute for 1 minute or until onions become tender and translucent. Stir in the garlic and saute for 1 more minute.

Place the tofu slices directly onto the pan (scoot the veggies out of the way with a spatula) and cook for 1 minute on each side or until lightly browned on each side.

Pour in the soy sauce mixture and cook for 3 minutes, flip the tofu slices over and cook for 3 more minutes or until the tofu absorbs all the liquid.

This Vegan Butter Chicken recipe is the plant-based version of the Indian classic. Made with marinated tofu and a velvety tomato-cashew sauce, it captures the rich flavors of the traditional recipe. Serve it with rice or naan for a satisfying and flavorful meal that will transport you to the vibrant streets of India.

Vegan Butter Chicken

tofu

tbsp plant-based yogurt

tsp garam masala

salt

tbsp oil

onion, thinly chopped

garlic, minced

ginger,

chili pepper,

tbsp cumin seeds (whole)

tomatoes, chopped into chunks

tbsp garam masala

raw cashews, soaked in boiling water

tbsp coriander

tbsp turmeric

tbsp chili powder (or paprika powder)

butter

tbsp sugar

soy cream (can sub with oat cream or coconut milk)

Rice or naan

cilantro

In a bowl, mix together plant-based yogurt, garam masala, ground coriander, ground turmeric, and a pinch of salt. Add the tofu cubes to the marinade. Let it marinate for 20-30 minutes. Then cook the tofu in an air fryer or oven at 200 degrees Celsius (400 degrees Fahrenheit) for 20 minutes.

Prepare the ingredients:

Meanwhile, heat the oil in a pan. When the oil is heated, add the onion and whole cumin seeds. Stir-fry until the onion becomes transparent (about 1 minute).

Add the minced garlic, grated ginger, and chopped chili pepper to the pan and fry for an additional 1 minute.

Add the chopped tomatoes, drained cashews, and a little water. Stir for a few more minutes, then add the spices: salt, sugar, ground coriander, ground turmeric, and chili powder. Mix well and simmer for 10-15 minutes until the tomatoes become soft and mushy.

Turn off the heat. Use an immersion blender or stand blender to puree the mixture. Pour the mixture back into the pan.

Add the cooked tofu and soy cream to the pan. Garnish with chopped cilantro.
