Cajun Dirty Rice | Slimming &amp; Weight Watchers Friendly

rice

beef

bacon medallions

red pepper, diced

yellow pepper, diced

green pepper, diced

onion, diced

carrot,

mushrooms, quartered

spring onions, sliced

beef stock pot

chicken stock cube

tsp cajun seasoning

200 ml boiling water

bay leaf

Worcestershire sauce

low calorie cooking spray

Cook

Cook the rice according to the packet instructions, adding a bay leaf and chicken stock cube to the water before cooking. Set the rice aside once cooked

Add the stock pot to 200ml of boiling water and set aside (this isn&#039;t the water that you cook the rice in - this is separate)

Spray

Spray a frying pan with low calorie cooking spray, then cook the mince, onions and bacon until brown

Add the Cajun seasoning and Worcestershire sauce and stir

Add the carrots, mushrooms, peppers, and the made up beef stock. Cook until the peppers start to soften

Add the cooked rice and spring onion and stir until all the rice is coated

Taste and add some more Cajun seasoning if it's not spicy enough

This easy Dirty Rice recipe is a popular Cajun dish made with white rice that becomes &quot;dirty&quot; in color when cooked with beef, sausage, chicken, veggies and spices. It&#039;s made in just one pot and is a hearty, flavorful meal everyone will love!

Dirty Rice

½ lb ground beef (, 80/20)

½ lb ground sausage ((I use Jimmy Dean pork sausage))

chicken livers

salt

black pepper

all-purpose flour

onion (, diced)

celery (, diced)

green bell pepper (, diced)

garlic (, minced)

Cajun seasoning

cayenne pepper

oregano leaves

thyme

bay leaves

chicken broth

green onion

parsley

Add ground beef, sausage and liver to a large saucepan over medium heat. Season with salt and pepper and cook, crumbling with a wooden spoon, until browned.

Add flour and stir. Add onion, bell pepper, and celery and sauté for 2 minutes. Add garlic, Cajun seasoning, cayenne, oregano, thyme and bay leaves and stir to combine.

Add rice and chicken broth. Bring to a boil, cover, reduce heat to low and simmer for 20 minutes. Remove from heat all allow to rest for 5 minutes. Remove lid, gently fluff rice with a fork, reapply lid and rest for 5 more minutes.

Garnish with green onion and parsley before serving.

This savory Cajun dirty rice recipe is made in one-pan so it’s great for weeknight meals. This Cajun recipe takes 30 minutes and is bursting with flavour!

Cajun Dirty Rice

500 g pork mince ((£2.50))

peppers, red and green ((£0.59x2)=(£1.18))

white onion, finely diced ((£0.15))

garlic, finely chopped ((£0.40))

tbsp Jalapenos, sliced ((£1.25))

cheddar cheese

tbsp rapeseed oil

tbsp cajun seasoning

tomato puree

beef stock

Salt & Pepper

Preheat a large non-stick frying pan with 1 tbsp oil over high heat. Add the mince, break apart roughly, and brown for 5 minutes, seasoning with salt and pepper.

Next, break the mince apart properly, stir, and add the onion. Cook for 5 more minutes, reducing the heat to medium/low then add the garlic, tomato puree, Cajun seasoning and peppers to cook for a further 2 minutes.

Now add the rinsed rice and chicken stock and stir together.  Place a lid on the pan and simmer on a low heat for around 20 minutes, stirring occasionally to ensure the rice isn’t sticking. Add additional stock if the mixture becomes dry and ensure the rice has cooked through.

When ready, check for seasoning and add salt and pepper if necessary. Top with jalapeno slices and sprinkle a sprinkle of fresh chives (or coriander if you prefer).
