Cajun Herb Butter Sweet Potato Fries

Preheat your oven to 425°F. Line two baking sheets with parchment paper, spray the parchment paper in nonstick cooking spray and set aside.

Place the sweet potato fries in a large mixing bowl and add the olive oil, rosemary, thyme, paprika, salt, and pepper. Use a wooden spoon or your hands to toss the fries, making sure they are evenly coated in the oil, herbs, and spices.

Divide the fries evenly among the two prepared baking sheets. Use your hands to spread them out into a single layer, making sure no fries overlap. Bake the fries in the preheated oven for 35 to 45 minutes, flipping the fries about halfway through the cooking time with a spatula.

Meanwhile, in a medium mixing bowl whisk together the melted butter, garlic, garlic powder, onion powder, cayenne pepper, salt, and fresh parsley until combined. Drizzle the herb butter over the fries as soon as you remove them from the oven. Use silicone-tipped tongs to toss the fries and evenly coat them in the herb butter.

This is optional, but it helps to get rid of some of the starch, which results in crispier fries. Fill a large bowl with water and add ice and add the potatoes. Soak for at least 30 minutes, then drain and rinse.

Lay them on a few layers of paper towels and dry well. This is important to make sure that the seasoning will stick properly.

Add the potatoes to a bowl and coat with 1 tablespoon of oil. Then, add the spice mix and stir until every last piece is well-coated.

If using an air fryer, preheat it to 390ºF (200ºC). Spray the air fryer basket with cooking spray, then add the fries in a single layer. Cook for 20-25 minutes, or until golden brown.

Finish by sprinkling a little bit of sea salt before serving.
