This savory Cajun dirty rice recipe is made in one-pan so it’s great for weeknight meals. This Cajun recipe takes 30 minutes and is bursting with flavour!

Cajun Dirty Rice

500 g pork mince ((£2.50))

peppers, red and green ((£0.59x2)=(£1.18))

white onion, finely diced ((£0.15))

garlic, finely chopped ((£0.40))

tbsp Jalapenos, sliced ((£1.25))

cheddar cheese

tbsp rapeseed oil

tbsp cajun seasoning

tomato puree

beef stock

Salt & Pepper

Preheat a large non-stick frying pan with 1 tbsp oil over high heat. Add the mince, break apart roughly, and brown for 5 minutes, seasoning with salt and pepper.

Next, break the mince apart properly, stir, and add the onion. Cook for 5 more minutes, reducing the heat to medium/low then add the garlic, tomato puree, Cajun seasoning and peppers to cook for a further 2 minutes.

Now add the rinsed rice and chicken stock and stir together.  Place a lid on the pan and simmer on a low heat for around 20 minutes, stirring occasionally to ensure the rice isn’t sticking. Add additional stock if the mixture becomes dry and ensure the rice has cooked through.

When ready, check for seasoning and add salt and pepper if necessary. Top with jalapeno slices and sprinkle a sprinkle of fresh chives (or coriander if you prefer).

This easy Cajun rice recipe will have your mouth watering and your stomach growling as the aroma fills the kitchen. You only need 7 ingredients and a skillet!

Cajun Rice

unsalted butter

white onion

green bell pepper

celery

Tablespoons Cajun seasoning (divided)

chicken stock

Basmati rice

Melt butter in skillet over medium-high heat until foamy.

Add onion, green pepper, and celery and saute for 2-3 minutes.

Sprinkle 1 tablespoon of the Cajun seasoning over the vegetables in the skillet. Saute for 2 minutes.

Add chicken stock, remaining Cajun seasoning, and the rice. Bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is tender and has absorbed the liquid.If there’s a small amount of liquid left after the cooking time is over, you can turn off the heat and keep the lid on for a few more minutes to allow the rice to absorb and finish cooking.

Very good but too much sodium for my liking.  I used a little more than half and it was perfect. Could have been the Ragin’ Cajun season blend I used.

Excellent side for the smoked turkey I cooked. Thanks so much for sharing the recipe. Will definitely make again but probably slightly less cajun seasoning.  Mine was store-bought and maybe that made a difference.

Really good recipe, a little too spicy for the family but I had seconds. Next time I'll just go easier on the spices but definitely recommend!!!

Blackened Tofu and Cajun Brothy Rice

neutral oil, (such as vegetable

white onion, (roughly chopped (preferably charred, but optional))

small bell pepper, (roughly chopped (preferably charred, but optional))

celery, (roughly chopped (preferably charred, but optional))

fresh garlic, (smashed)

jalapeno, (cut in half lengthwise (preferably charred, but optional))

black peppercorns

chick’n broth or vegetable broth

bay leaf, (optional)

(plus

garlic

white rice

½ cups low-sodium vegan chick’n broth or vegetable broth

bay leaf

Cajun seasoning, (such as Slap Ya Mama

green onion

parsley

seasoning sauce, (optional)

Cajun Seasoning

yeast

brown sugar

neutral oil

jalapeno

Salt and pepper, (to taste)

To start, prep the broth.

Heat the oil in a pot over medium heat.

Once the oil is hot, add the onion, bell pepper, celery, garlic, jalapeno and peppercorns.

Pour in the broth, add the bay leaf, and season with 1 teaspoon salt, stirring to combine.

Increase the heat to medium-high and bring to a boil.

Once at a boil, reduce the heat to low, cover with the lid slightly ajar, and simmer for at least one hour (the longer you simmer, the more flavorful the broth - I like to simmer it for around 3 to 4 hours).

After the broth has been simmering for desired time, strain through a fine mesh sieve (make sure you don’t discard the broth!).

Discard the veggies and seasonings and return the strained broth to the pot.

Taste and adjust seasonings, if necessary. Keep over low heat to keep warm, stirring occasionally.

While the broth is simmering, make the rice and prepare the rice.

To Make the Broth:

Heat the oil in a pot over medium-high heat.

Add the onion, bell pepper, and celery, and cook, stirring often, until softened and lightly charred at the edges, 5 to 7 minutes.

Add garlic and cook 1 more minute.

Next, stir in the rice and toast for 1 minute.

Pour in the broth, bay leaf, and Cajun seasoning.

Bring to a boil, then reduce heat to low.

Cover and simmer 15 to 18 minutes.

Turn off the heat and let sit 10 minutes before removing the lid and fluffing.

After 10 minutes, remove the lid and fluff the rice.

Stir in parsley and green onions. Adjust salt and cayenne as needed.

To Make the Cajun Rice

In a large bowl, whisk together the seasoning sauce (if using), Cajun seasoning, nutritional yeast, and brown sugar.

Add the shredded tofu and toss to coat. Set aside.

Heat the oil in a large sauté pan over medium heat.

Once the oil is hot, add the onion, garlic, and jalapeño and cook, stirring often, until fragrant, 1 to 2 minutes.

Add the seasoned tofu and cook, stirring every few minutes, until add the seasoned tofu and cook, stirring every few minutes, until browned and crispy around the edges, 15 to 20 minutes.

Taste and adjust seasonings, if necessary.

To Make the Crispy Tofu:

Scoop Cajun rice into bowls, top with the blackened tofu, and ladle in hot broth.

Finish with preferred garnishes and enjoy!
