This is a popular casserole in Monroe, Louisiana.  Thurman's is quite famous for it.  The first time I ate it, a nurse that I worked with brought it to work.  This is my take on the recipe.

Original Crawfish or Shrimp Monica

lb pasta (fettuccine, linguine, rotini, penne, or bowties

crawfish

butter (don't use margarine)

pt half and half*

green onions

We think this is more of a gumbo rather than a jambalaya but whatever you want to call this recipe, it's delicious. Hearty and savory, it's full of Cajun flavor. We added some Cajun andouille sausage to ours to add a nice kick of spice. Make this for Mardi Gras and everyone's taste buds will be happy.

Tbsp canola oil, divided

chicken thighs, or other chicken pieces to make about 2 cups of meat

sweet peppers

medium ribs of celery, chopped

c diced okra (optional)

can(s) stewed tomatoes, 15 oz each

c chicken stock, more or less

lb andouille sausage (or other type)

- 1 lb shrimp, cleaned

For the record, I plain love cabbage.  But even with my high expectations of this dish, it was still a pleasant surprise!  The mixture of the seasonings is spot on and the bacon was the perfect finishing touch.  I would serve this tasty side to anyone I liked any day of the week!

Traditionally shrimp cocktail is served with cocktail sauce. This version, though, is served with a zesty remoulade sauce. It's full of spice but not spicy. The horseradish is not overwhelming, so if you don't like horseradish we think you'll still like this. You can really dip anything in this sauce... chicken, steak, crawfish, etc.

Spicy Blackened Catfish

sweet paprika

oregano,

thyme,

cayenne,

sugar

black pepper

catfish fillets (about 1 pound)

garlic clove,

unsalted butter

lemon wedges as an accompaniment

In a small bowl combine the paprika, the oregano, the thyme, the cayenne, the sugar, the salt, and the black pepper, pat the catfish dry, and sprinkle the spice mixture on both sides of the fillet, coating them well. In a large skillet sauté the garlic in the oil over moderately high heat, stirring, until it is golden brown and discard the garlic. Add the butter, heat it until the foam subsides, and in the fat sauté the catfish for 4 minutes on each side, or until it is cooked through. Transfer the catfish fillets with a slotted spatula to 2 plates and serve them with the lemon wedges.
