Simple and delicious Pumpkin Bars that are soft, fluffy and topped with the best cream cheese frosting. They&#039;re the perfect treat for a party, holiday gathering or just to enjoy at home with a big glass of milk or hot cup of coffee. We love making these bars all fall and winter long!

Pumpkin Bars

all-purpose flour

cinnamon

ginger

nutmeg

baking powder

baking soda

salt

pumpkin purée

eggs

vegetable oil

sugar

brown sugar

evaporated milk

vanilla extract

Preheat oven to 350˚F. Lightly grease multi-cavity mini loaf pan (or 9”x 13” baking dish).

Combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Whisk together.

In another mixing bowl combine remaining ingredients and whisk together until fully mixed.

Whisk flour mixture into pumpkin mixture.

Pour 1/3 cup of the batter evenly into each cavity of the prepared loaf pan and bake for 20 to 25 minutes or until a toothpick comes out clean when inserted into the center of the bars (testing a couple of the bars in the center of the loaf pan is best).

Slightly cool bars, about 15 to 20 minutes, before transferring them to a cooling rack to completely cool.

Frost tops of each bar with cream cheese frosting, finish with a sprinkle of ground cinnamon and serve.

Funfetti ooey gooey bars are filled with sprinkles and so easy to make! These cookie bars turn out ooey gooey and delicious.

Funfetti Ooey Gooey Bars

yellow cake mix

canola oil

heavy cream

rainbow sprinkles + 1 Tbsp rainbow sprinkles

white chocolate chips

tsp vanilla extract

Preheat oven to 350 degrees F and grease an 8 1/2" x 11" or 8" x 12" baking dish.

In a large bowl, mix together the cake mix and 1/4 cup of sprinkles.

Add the oil and egg and stir to combine. Then add the heavy cream and vanilla, and stir until combined.

Add the white chocolate chips and stir until chocolate chips are well distributed.

Spread into the pre-greased baking dish and level out with a spoon.

Sprinkle the top with the additional 1 Tbsp of sprinkles.

Bake for 30-33 minutes until a toothpick comes out clean.

Cool completely (possibly overnight), then cut into small squares.

Gooey Butter Cake - With a Cake Mix

cake mix (yellow)

butter (melted)

nutmeg (optional)

cream cheese (softened)

sugar (powdered)

In a large bowl, mix together the cake mix, egg, melted butter, and nutmeg (if using).

In a 7x9 baking pan lined with parchment paper, press the batter in an even layer.

In a large bowl, stir together the softened cream cheese, eggs, and vanilla extract.

Stir in the powdered sugar.

Pour this frosting batter over the top of the cake batter layer.

Bake at 350°F for 45 minutes. The edges will puff slightly and turn golden brown, while the center will remain very jiggly.

Remove from the oven and allow the cake to cool.

Refrigerate for at least two hours (covered) or overnight before cutting into bars.

Omg I love making this recipe. Doesn’t last long once it’s done lol I have a question to anyone that might know or could guide me. I make a variation with spice cake mix for fall and it’s delish. But I’m thinking I want to add pumpkin flavor to either the cake or cream cheese part, something like canned pumpkin purée or something. No idea what or how, does anyone have any suggestions? Thanks!

I made this last weekend &amp; passed it out before i even tried it &amp; everyone was coming back for more &amp; the recipe! It did bake much faster than the 45 mins suggested, mine was done in 30 mins (but its a new oven). &amp; i only used 1/2 the powedered sugar to make less sweet. So tonight im making 2 batches but im using white cake for one &amp; strawberry funfetti for the other (only cake i have on hand). Ill let you know how they turn out! Im sure theyll be hits!!

Yes, this is a very sweet dessert. If you don't like sweet frostings I would venture to guess you may not like this.
