Caldo de Pollo, or Mexican chicken soup, is a healthy soup made from chicken thighs and vegetables like carrots, zucchini, corn, cabbage and potatoes.

Caldo de Pollo

water

chicken thighs, (skin removed)

garlic, (peeled)

bay leaves

coarse kosher salt, (plus more to taste)

potatoes,

frozen mini ears of corn

zucchini,

carrots,

green cabbage,

lime juice ((the juice of 2 limes))

cilantro

mix-ins and toppings: white rice

In a large Dutch oven or soup pot, bone-in chicken thighs, garlic, bay leaves, and salt. Bring to a boil, cover, reduce heat to a low simmer and continue cooking for 1 1/2 to 2 hours until the meat is tender.

Skim off and discard any foam floating at the top of the pot as well as the bay leaves and garlic cloves. Transfer the cooked chicken to a medium bowl and set aside to cool slightly.

Add the potatoes, corn, zucchini, carrots and cabbage.

Bring soup to a boil, reduce heat to a low simmer and continue cooking for 15 minutes until all the vegetables are tender and cooked through.

While the vegetables are cooking, remove the bones from the chicken and discard. Shred or cut the chicken into bite-sized pieces.

When the vegetables are fully cooked, add the shredded chicken, chopped cilantro and lime juice. Stir everything together and taste. Season with salt and pepper, if desired.

Serve soup in large bowls, making sure that each bowl gets a little bit of everything. Top each bowl desired toppings and mix-ins like jalapenos, white rice, Mexican rice and a few dashes of Tobasco hot sauce. This really brings out the flavor of the broth!

Boneless Skinless Chicken Thighs

Chicken Broth

Canned Tomatoes (undrained)

Celery (chopped)

Carrots (chopped)

Jasmine Rice (or other small grain rice)

onions, chopped

Cilantro (with stems)

Garlic

Cumin

salt

pepper

Lime

Place all ingredients into the inner liner of your Instant Pot.

Close the pot and set it to high pressure for 10 minutes.

When time is up, let the pot rest for 10 minutes. Then release all remaining pressure.

Using silicone tongs, remove the chicken from the pressure cooker and shred it.

Stir the shredded chicken back into the soup. If desired, remove the sprigs of cilantro since you were using them mainly for seasoning.

Squeeze in the lime or lemon juice.

Serve the soup as is, or with slices of avocado stirred in at the last minute.  I like to serve with additional lime wedges, warmed corn toritllas, or crushed tortilla chips.

safflower petals (azafran)

While the chicken is boiling, in a separate pan, heat the oil over medium heat, add rice and cook, stirring occasionally, until browned, about 2 to 3 minutes, being careful not to let it burn. Add onion and continue cooking until onion is translucent, about 2 minutes. Add tomato and cook for an additional 3 minutes. Add mixture to chicken pot.

Add carrots, celery, and potatoes to soup and let come to a boil; reduce heat. Let simmer until vegetables cook through, about 20 to 30 minutes. Add tomato sauce, cilantro, and safflower petals during the last 5 minutes.

Ladle soup, including a piece of chicken for each serving, into bowls and serve with lime wedges, warm corn tortillas, and salsa casera.

Made this tonight when I was feeling under the weather. Came together fast and used up a bunch of the veggies that were languishing in the back of the fridge! The only change I made to the recipe was I did the noodles instead of rice (cooked separate), and I soaked and pureed a few dried ancho chiles and added them in, since I was craving that flavor. Soooooo good!!

Made today!  Used packaged broth instead of water, such great flavor!  For my taste some spice heat would push it over the top, but for the other two in the house it was perfect!  Definitely on the keeper recipe pile.  Thanks for sharing.

I've always made  Caldo de Res &amp; Menudo..but never Caldo de Pollo..I will definitely make this..it looks delicious &amp; easy to make..I love your recipes..I must admit I'm not a big fan of real spicy foods, but always seem to add just a little bit of spice to them..

My family loves this caldo de pollo recipe.

I'm feeling under the weather and opted for this caldito de pollo. I can't say that the caldo actually worked since its to soon to tell but it did feed the soul. So easy to make and In about 45 minutes you have this yummy bowl. The flavor was delicious and I really can't wait to make this again soon.

I’ve made this soup many times and it’s so full of flavor and comfort! I recently made a batch for a meal train for a friend while they recovered from surgery and it was a major hit. They appreciated how hearty the meal was and how easy it is to store and reheat as they recover.

The taste brought me back to my grandmother's small kitchen and when we would visit her from out of state she would make this delicious caldo.  She was on a very fixed income but most of these ingredients were always around. I did alter it a little bit I had almost everything except for tomatoes or tomato sauce but I did have some New Mexico dried chilies and Guajillo chiles, so after eating them up and running them through the blender and frying it I added the sauce to the broth, and thank you for the comment that you made about the cilantro I still get a slight chuckle when I think about that  hope you and your family have a very blessed memorable Thanksgiving
