These delicious Cowboy Baked Beans with ground beef and bacon are so easy to prepare and make the perfect side dish for BBQ. A real meat lover&#39;s treat!

Cowboy Baked Beans with Ground Beef and Bacon

beef

bacon (6 slices)

onion

pork & beans

kidney beans (drained)

garbanzo beans, drained (can substitute lima

ketchup

brown sugar

white vinegar

salt

liquid smoke

Preheat oven to 325 degrees.

Cook bacon until crispy. Drain and set aside to cool.

While bacon is cooking, brown ground beef with chopped onion.

Drain beef and pour into a large mixing bowl.

Crumble bacon into small pieces and add to bowl.

Add the rest of the ingredients and mix well. Pour into a 9x13 baking dish or dutch oven.

Bake covered at 325 degrees for 1½ hours. Remove the lid for the last 15 minutes of cooking time.

Calico Baked Beans with Beef and Bacon

bacon

black pepper (divided)

(1 cup) red onions (chopped)

garlic (minced)

(15 ounces) butter beans (drained)

(15 ounces) pinto beans (drained)

(15 ounces) light kidney beans (drained)

(15 ounces) black beans (drained)

(15 ounces) cannellini beans (drained)

(28 ounces) pork and beans (not drained)

mustard

apple cider vinegar

Worcestershire sauce

smoked cumin

smoked paprika

Preheat oven to 350 degrees F (175 degrees Celsius).

Cook and crisp the bacon in a large Dutch oven over medium-high heat. Remove the bacon and drain it on paper towels, reserving one tablespoon of bacon fat in the pot.

Add the ground beef, 1 teaspoon salt, and ½ teaspoon black pepper to the pot and brown the beef in the reserved bacon fat.

When the beef is 50% browned, add the onion and garlic to the pot and continue browning the beef until thoroughly cooked.

Add the cooked bacon back into the pot along with the drained canned beans (including and the pork and beans, with their liquid) and stir well.

Add the remaining ingredients; ketchup, mustard, vinegar, brown sugar, liquid smoke, smoked paprika, smoked cumin, and Worcestershire sauce. Mix well and simmer on low heat, stirring occasionally, until heated through.

Cover and transfer the pot to the preheated 350-degree F oven (175 degrees Celsius), and bake for 45 minutes.

Cool slightly and serve hot.

CALICO BAKED BEANS WITH BEEF AND BACON
Serves 10    Prep: 15    Cook time: 45
INGREDIENTS
1 pound bacon, cut into 1" strips
1 pound of ground beef
2 medium red onions, chopped
4 cloves garlic, minced
1 - 15 oz. can butter beans, drained
1 - 15 oz. can of pinto beans, drained
1 - 15 oz. can of light kidney beans, drained
1 - 15 oz. can of black beans, drained
1 - 15 oz. can cannellini beans, drained
1 - 28 oz. can pork and beans, with their liquid
1 cup ketchup
1/4 cup prepared yellow mustard
1/2 cup apple cider vinegar
1/2 cup packed brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon liquid smoke
2 teaspoons smoked cumin
2 teaspoons smoked paprika
INSTRUCTIONS
-Cook and crisp the bacon in a large Dutch oven over medium-high heat.  Remove the bacon and drain it on paper towels.  Discard all but one tablespoon of the bacon fat and brown the ground beef in the same pot.
-Meanwhile, chop the red onion and mince the garlic.
-When the beef is 50% browned, add the onion and garlic to the pot and continue browning the beef until thoroughly cooked.
-Add the bacon and stir to combine.
-Drain all the cans of beans (except the pork and beans) and add them to the beef and bacon mixture.
-Stir well to combine and add the remainder of the ingredients.
-Mix well and simmer on low heat until thoroughly heated through. 
-Cover and transfer the pot (ensuring it's ovenproof) into a preheated 350-degree oven and bake for 45 minutes.  
-Cool slightly and serve.
