Pre-heat a 12-inch camp Dutch oven for baking at 350 degrees (25 total coals = 17 top / 8 bottom). If you are using a propane stove with a Dutch oven dome and heat diffuser plate, get it ready to bake on a level surface.

Mix the cracker crumbs with the butter and set the mixture aside.

Cook the macaroni according to the package directions for al dente consistency … you want it firm to the bite so it does not get mushy as you bake it with the cheese.

Drain the macaroni … then gently mix it in a large bowl along with the Velveeta, soup, sour cream, Parmesan cheese, milk, salt, and black pepper.

Spray the Dutch oven bottom and sides with cooking spray.

Pour the macaroni and cheese mixture into the Dutch oven and sprinkle the cracker crumb mixture over the top … cover with the lid and bake it until it is bubbly. This will take about 30 minutes. Camp Cooking Tip: Rotate the Dutch oven and lid 1/4 turns in opposite directions every 10 minutes or so for even baking.

Now, move all of the coals to the top of the oven to brown the crumb topping to a golden brown color. This will take about 5 minutes.

Remove from coals and let stand a few minutes before serving.

chicken breasts (1/2 inch cubes (see * Note))

(28 oz) can diced tomatoes, with juice

bay leaves

shrimp

servings cooked long-grain rice

For serving, hot sauce, red pepper flakes

Heat a 12-inch Dutch oven over medium heat using a campfire or camp stove. Melt the butter, then add the onions, celery, bell pepper and garlic, cook till softened, stirring frequently.

Add the sausage and chicken, cook till browned, stirring occasionally, about 10 minutes.

Stir in the Cajun seasoning, dried thyme, paprika and cayenne pepper. (see ** Note)

Adjust the heat to bring ingredients to a simmer and add the tomato paste, mixing it in thoroughly before adding more ingredients.

Now, pour in the tomatoes with juice and add the bay leaves, then cover with the lid maintaining the pot at a simmer for about 20 minutes, stirring occasionally.

Add the shrimp and cook just until it is no longer translucent, about 5 minutes.

Remove bay leaves and serve over cooked rice.

NOTE: Special Equipment Required: Pellet grill smoker and pellets.

Get pellet smoker preheated to 225 F degrees.

Cover chicken legs generously on all sides with dry rub, we used our simple spicy dry rub. Let the drumsticks sit out at room temperature while the pellet grill is heating up to temperature. https://www.campingforfoodies.com/spicy-dry-rub/

Place the chicken legs on the smoker’s grill rack and turn them every half hour or so throughout the cooking time. Cook until internal temperature reaches 165 F degrees. This will take approximately 2 hours, depending on the size of the legs you are smoking. Camp Cooking Tip: The outside of the chicken legs will begin to dry before the internal temperature reaches doneness, so spritzing with your favorite liquid mixture is important. We like using equal parts of apple juice, apple cider vinegar and olive oil.

If you are adding BBQ sauce, brush it on the chicken legs when their internal temperature reaches about 150 F degrees so it has time to caramelize while the chicken finishes cooking.
