Peruvian beans, made with canary beans cook up creamy and delicious. Packed full of flavor with just a hint of spice.  Serve them alone or alongside some rice or potatoes.

Vegan Peruvian Beans

beans

vegetable broth

olive oil

onion

garlic (minced)

amarillo paste

Salt and black pepper

Cilantro and lime wedges

Soak the canary beans overnight (at least 8 hours) in water.  When ready to prepare, empty off water and rinse beans.  Add 3 cups vegetable broth to beans and heat to a boil.  When the liquid begins boiling, reduce heat and cook for one hour.

When the beans are just about ready, heat 1 T of olive oil in a skillet over medium-high heat.  Add onions and garlic sauté until softened, stirring frequently so they don’t burn or get too brown, about 5-8 minutes.  Add aji amarillo paste then cook for an additional 2 minutes.

Add the mixture from the skillet to the beans.  Taste,  add salt and pepper as needed.  Let the beans cook with the added ingredients for about 10-15 minutes to absorb the flavors.  Serve up in a bowl and garnish with chopped cilantro and a squeeze of lime.

Creamy and delightful mayocoba beans or canary beans cook up perfectly in the Instant Pot.  Eat them on their own as a simple bowl of beans or use to meal prep the beans to use in other recipes during the week.

Easy Mayocoba Beans Instant Pot Recipe

grapeseed oil

Use the high saute setting on the Instant Pot to heat the oil. When the oil is hot, add the onion and garlic and cook until softened and translucent.

Add the beans and bay leaf and 6 cups of water to the pot.

Secure the lid to your pressure cooker or Instant Pot and set it to cook on high pressure for 30 minutes. Be sure to close the pressure release valve.

When the cooking time is done, use natural release to allow the pot to depressurize.

Remove the lid following all the safety instructions for your pressure cooker. Give them a stir and add salt and pepper to taste.

Your beans are ready to eat or add to other recipes as desired.

Soak the beans overnight. Heat the oil in a large stock pot over medium-high heat. Add the onions and garlic and cook until tender and softened. Add the beans, seasonings, and water to the pot, cover it with a lid, and reduce the heat to low.  Cook for 45 minutes or until tender, stirring occasionally. Add more water if necessary.

Stove Top Instructions

Soak the beans overnight.  Saute the onions and garlic on the stove and then transfer to the slow cooker. Add the beans, seasonings, and water to the slow cooker. Set the cooking time to 6 hours on high heat or 8 hours on low heat. If possible, it helps to give them a stir every now and then while they are cooking.

Peruvian-Flavored Peruvian Beans

salt

bacon (cut in 1" pieces)

tomato paste

chicken broth

oregano

harina de camote ((see Ingredients in post for substitutions))

sea salt

red wine vinegar

honey

sea salt and fresh ground pepper

cook beans

Cook the beans according to your preferred method. Add the tablespoon of salt to a generous pot of water. See post Instructions for more information.

fry bacon

Fry the bacon. Drain bacon on paper towels. Remove all but 1 tablespoon of bacon fat from the pot.

cook aromatics

Cook the aromatics. Over medium-high heat, add the onion, cumin, bell pepper, garlic, ají panca and tomato paste. Sauté until onion is softened and mixture is very fragrant.

Add the beans, broth, and oregano to the pot. Cover and reduce heat. Simmer 15 minutes. Remove oregano sprigs if you used fresh.

Make the slurry. Whisk the camote de harina with reserved bean water (water or broth). Stir slurry into the beans mixture a little at a time over high heat until desired thickness is achieved.

finish beans

Add salt as needed, honey, and vinegar. Stir in the cooked bacon. Bring mixture back up to a simmer for 5 minutes before serving.
