Candied carrots make a really whimsical garnish for your carrot cake or cupcakes while adding the perfect crispy texture to your dessert! This unique crunchy topping is sure to impress even your most sophisticated guests! 

Candied Carrots

water

sugar

carrots (outer skin removed)

parchment paper

cooking spray

Preheat oven to 225 degrees

Line a baking sheet with parchment paper and spray with cooking oil

With a vegetable peeler, remove 15-20 long strips from the carrots

Bring water and sugar to a boil

Add carrot strips, reduce heat and simmer 15 minutes, watching closely so that the water and sugar mixture doesn&#039;t burn

Drain carrot strips and allow to cool for 5 minutes

Lay strips out in a single layer on the baking sheet, making sure they don&#039;t touch or they will stick together

Bake for 20 minutes

Remove carrot strips from oven

Working quickly, wind each carrot strip around the handle of a wooden spoon, slide off, and sprinkle with sugar

Allow carrot curls to cool for 30 minutes

Layer between wax paper and store at room temperature in an air tight container for up to 5 days

These candied carrots are sliced carrots in a brown sugar and butter glaze that are simmered until tender. It's a super easy side dish that's perfect for a weeknight dinner or a holiday meal!

Place the carrots in a large pan. Add 1 cup of water to the pan. Bring to a simmer and cook the carrots for 8-10 minutes or until tender.

Drain the water from the pan and return the pan to the stove over medium heat. Add the brown sugar, butter, salt and pepper.

Cook for 2-3 minutes or until butter and sugar have melted and carrots are coated in the glaze. Sprinkle with parsley and serve.

Honey Roasted Carrots (or candied carrots, as we like to call them) are a sweet, delicious, and healthy vegetable side dish. The easy to make carrots are coated in a honey glaze then roasted until tender and caramelized. They are totally addictive!

Spicy Honey Roasted Carrots

each: sea salt and pepper

cayenne pepper (or more if you like heat)

chives (to garnish)

Melt the butter in a large ovenproof skillet (see notes) over medium-high heat. Add the honey, salt, pepper, and cayenne and bring to a boil for 2 minutes. Add the carrots and toss to coat in the sauce.

Place the carrots in the oven and cook for 20 minutes. If you'd like some dark spots on your carrots, broil for the last 2-3 minutes. Be careful as they burn quickly.

Remove the pan from the oven and continue to cook the carrots for 2 minutes over medium-high heat on your stovetop to caramelize the honey. Once the sauce just barely starts to darken, remove the pan from the heat.

serve

Sprinkle with some minced chives and serve.

These candied carrots are the ultimate side dish! Sweet glaze, buttery texture, and just the right bite.

Scrub or peel carrots and slice into 2-inch slices. Set aside.

Combine water and salt in a high-walled skillet. There should be about 1&quot; of water in the skillet so add more water if needed. Bring water to a boil over high heat. When water is boiling, add carrots and cover with a lid. Reduce heat to medium and allow carrots to steam for 5-7 minutes or until just crisp tender. Do not over cook.

Drain off carrots and set aside. In the same skillet, over medium heat combine brown sugar and butter. Stir constantly until the mixture becomes melted and smooth. Cook for another 1-2 minutes until mixture is bubbly and thickens a little.

Add carrots back into the skillet with the brown sugar mixture and gently stir until carrots become coated in the mixture. Serve immediately.

These Honey Glazed Carrots are tossed with olive oil and raw honey and roasted to perfection. It's a healthy side that's sweet and savory!

The Most Delicious Honey Glazed Carrots

raw honey

thyme

Make glaze: To a small bowl add honey, olive oil, garlic, thyme, salt and pepper. Mix together until well combined.

To a medium bowl add carrots. Pour honey mixture over carrots and toss to coat.

Line a baking sheet with parchment paper. Spread carrots out on a baking sheet in a single layer.

Bake for 20-25 minutes, tossing halfway through. Remove carrots when they are tender and slightly caramelized.

Serve. Optional: garnish with freshly chopped flat leaf parsley

I'm not a big fan of carrots like this. The only way that I enjoy them is raw in salad or in Yakisoba. But these carrots on the pics look good! :D

I was not a big fan of this recipe - maybe too much sage?  Something just didn't taste right with all the flavors mixed together.  I had to use another sauce to be able to use the meat instead of throwing it.  

But...I did LOVE the carrots.  THANK YOU!!!  :)
