These are the BEST Homemade Chocolate Marshmallows! Soft, fluffy, and very chocolatey. They are perfect for gift giving. And in your hot chocolate too! Detailed recipe for perfect results.INTERMEDIATE - This recipe is easy, but some familiarity is recommended. If you are making this for the first time, I recommend first reading the recipe and post thoroughly, and having all the ingredients measured out before starting.  US based cup, teaspoon, tablespoon measurements. Common Measurement Conversions. Weight measurements are recommended for accurate results (especially important to weigh the cocoa powder).There is a long inactive time that is crucial for curing the marshmallows. You can also cure the marshmallows overnight or even up to 24 hours.

Chocolate Marshmallows Recipe

confectioner's sugar

cocoa powder

gelatin powder (9 tsp OR 3 ¾ gelatin packets)

120 mL water (½ cup)

g dutch cocoa powder (about ⅓ cup)

80 mL boiling water (⅓ cup)

tbsp vanilla extract

instant coffee granules (optional)

450 g white sugar (2 ¼ cups)

golden syrup or corn syrup (⅓ cup)

60 mL water (¼ cup)

¼ tsp sea salt (I prefer to use ½ tsp)

Apply a thin layer of butter or coconut oil on a 8 or 9 inch square pan. Alternatively, line the pan with parchment paper.

Whisk the confectioner&#039;s sugar and cocoa powder and set aside. You will not need to use all of it for the marshmallows.

Lightly grease a rubber spatula and a small offset spatula with butter or coconut oil - you&#039;ll be using these later.

Prep the pan and mallow mix

Place the water in the bowl of your stand mixer. Sprinkle the gelatin over the water and stir to saturate the gelatin.

Set aside for at least 10 minutes to let the gelatin bloom. By the time the sugar syrup is ready, the gelatin will have bloomed.

Bloom the gelatin

Place the cocoa powder in a small bowl. Add the boiling water and stir until you have a smooth paste.

Dissolve the instant coffee in the vanilla extract and stir it in with the cocoa paste to get a smooth mixture. Set aside until needed.

Make the cocoa powder paste

Place the sugar, golden syrup or corn syrup, salt, and water in a saucepan.

Gently stir to saturate all of the sugar with the water, or make an “x” in the middle of the pot with your fingertip to allow the water to slowly saturate the sugar.

Heat the sugar mixture over medium high heat. Swirl the pot to make sure the sugar is dissolving in the liquid.

Brush the sides of the pot with a pastry brush dipped in cold water, OR close the pot with the lid and let the sugar syrup simmer for about 1 - 2 minutes. The condensation will help wash down any sugar crystals on the side of the saucepan.

Cook the sugar syrup further, swirling the pot frequently (do NOT stir), until the syrup temperature reaches 245 - 247°F with a candy thermometer.

Remove the saucepan from the heat. Let it sit for about 30 - 60 seconds until the bubbles subside.

Make the sugar syrup

Place the mixing bowl (with the bloomed gelatin) in your stand mixer with the whisk attachment. While running the mixer on medium low speed, pour the hot sugar syrup along the side of the bowl. The heat from the syrup will dissolve the gelatin. PLEASE BE CAREFUL, as the syrup is very hot.

Mix the gelatin and sugar mixture for about 1 minute, and then add the cocoa paste.

Increase the speed to medium - medium high and mix for about 3 - 4 minutes.

Increase the speed to high (the mixture should be slightly thicker), and whisk for a further 6 - 10 minutes, or until the mixture is ready.

The mixture is ready when it has doubled in size, and the marshmallow is a pale brown color with a glossy meringue like texture.

At this point, you should be able to see the marshmallow mix form strings that pull away from the side of the bowl as it’s being mixed, and the bowl should still feel a little warm.

When the marshmallow mix is ready, scrape it all out into the prepared pan using the rubber spatula.

Working quickly, evenly spread the marshmallow mix in the pan with the offset spatula.

With a small sieve, sift the mallow mix over the surface of the marshmallow. Make sure the whole surface is coated in a thin, even layer.

Allow the marshmallow to cure (at room temperature) for at least 6 hours.

Making the chocolate marshmallow mix

Once the marshmallow is cured, lift it out of the pan and place it on a cutting board. Gently peel off the parchment paper from the sides, so it’s easier to cut it.

Cut the marshmallow into the size you prefer. I prefer to cut them into 6 x 6 for 36 pieces.

Use a clean, dry, sharp knife to cut through the marshmallow, wiping the blade clean between cuts.

Coat the cut marshmallows with the mallow mix to prevent the sides from being sticky.

The marshmallows are now ready to be eaten.

Cutting the marshmallows

The marshmallows should be stored in an airtight container or jar. Keep them at room temperature. NOT in the fridge or freezer.

Honeycomb Toffee Recipe

granulated white sugar (or brown sugar (1 ¾ cup))

water

tbsp baking soda

gelatin

300 g tempered bittersweet chocolate (approximate weight, you can also use milk or semisweet chocolate instead)

Sea salt flakes (I use maldon sea salt flakes)

Line a 9 inch square pan with parchment paper (sides and bottom). Set aside until needed.

Keep a spatula and a whisk ready, as you will need them towards the end of the cook time.

Place the sugar, golden syrup / corn syrup, water, and salt in a large saucepan (this mixture will expand a lot, so use a large pot with enough space).

Gently stir to saturate the sugar with the water.

Heat over medium high heat, while swirling the pot frequently to ensure the sugar is dissolved.

Brush the sides of the pot with a pastry brush dipped in cold water to dissolve the sugar crystals on the side of the pot. Do NOT stir the sugar syrup.

When the sugar syrup comes to a boil and all the sugar has dissolved, clip a candy thermometer to the side of the pot.

Heat the sugar mixture until it reaches 300°F. Swirl the pot as you heat the sugar to make sure the syrup is evenly heating (check several spots in the syrup with the candy thermometer to make sure it&#039;s evenly heating).

Get the prepared pan, whisk, and spatula ready when the sugar syrup is close to 300°F. You can use an oven mitt for whisking the sugar base in the following steps, if you like.

When the sugar syrup reaches 300°F, remove the pot from the heat and immediately add all of the baking soda.

Whisk the baking soda well into the sugar syrup. Make sure to reach all the corners of the pot. The sugar syrup will expand into a foamy honeycomb mixture.

As soon as the baking soda is thoroughly mixed in and the mixture has expanded, scrape the honeycomb mixture into the prepared pan.

Allow the mixture to harden for a few hours.

Once the candy is hardened, remove it from the pan and peel off the parchment paper. Place it on a cutting board.

Use the tip of a sharp knife to break the honeycomb into pieces. These will be uneven pieces.

Honeycomb toffee

While the sugar syrup is cooking, bloom the gelatin in the water in a small microwave-safe bowl. Let it bloom for 10 minutes.

Microwave the gelatin for just a few seconds to dissolve the gelatin. Do NOT let it boil.

Add the dissolved warm gelatin mixture into the sugar syrup, followed by the baking soda. Whisk vigorously, and then transfer the mix into the prepared pan (as per instructions above).

For more dense, sponge toffee texture

Temper the chocolate using this guide.

Dip the honeycomb toffee in tempered chocolate (you can dip them either fully or partially). Alternatively, you can brush the chocolate on the toffees with a clean, dry pastry brush.

Place them on a parchment paper lined tray. Sprinkle salt on top before the chocolate sets.

Allow the chocolate to set at room temperature (do not put them in the fridge).

To coat honeycomb with chocolate

Uncoated honeycomb toffee - Store these honeycomb pieces in an air-tight container at room temperature for about 1 week (or 2 weeks if it&#039;s not humid). Place parchment paper or wax paper between layers of the honeycomb to prevent them from sticking to each other.

Chocolate coated honeycomb toffee - These can be stored at room temp for much longer (even up to a month) in an air-tight container.

Do NOT store these in the fridge or freezer.

Storing the toffee

Once you know the basics, you can make perfect vanilla marshmallows every single time. Please note there is 6 hours of inactive time. Intermediate - This recipe will be easy for those who like to cook / bake regularly.  Using the tips given in the post will make the process easy. Please read the whole recipe (and post) before proceeding for the first time.

Basic Homemade Marshmallows

sugar

agave syrup (or 1/4 cup corn syrup)

water (increase water to ⅔ cup if you’re

water (for the gelatin)

tsp gelatin (about 3 packets of Knox gelatin (21. 6 g))

salt

½ tsp pure vanilla extract

confectioner's sugar (sifted)

cornstarch (cornflour)

Place the sugar, agave syrup (or corn syrup), and water in a pot. Stir until the sugar is moistened and mixed with the water.

If you’re not using agave or corn syrup, place the sugar in the saucepan and pour the water along the edge of the saucepan. Make an “X” in the sugar using your finger - wall to wall, to let the water spread and moisten the sugar.

Heat over medium-high heat until the sugar syrup comes to a boil. Gently swirl the pan to evenly distribute the heat.

Cover the saucepan with a lid and lower the heat to medium. Let the syrup cook for 2 minutes. Do not lift the lid at this point.

After 2 minutes, remove the lid and check to make sure there are no sugar crystals on the side of the saucepan. If there are crystals, then cover the saucepan for a further minute to allow the condensation to wash down the sugar crystals into the syrup.

Clip the sugar thermometer to the side of the saucepan, and set the temperature between 242 - 245°F. Let the sugar syrup cook until it reaches this temperature. If you don't have a sugar thermometer, please check the sugar stage every 5 minutes until it reaches the firm-ball stage (please read the recipe notes in the post to learn how to do this).

While the sugar syrup is cooking, prepare the gelatin. Place ½ cup of water in the mixer bowl. Add the gelatin to the water and mix to moisten the gelatin. Set aside to allow the gelatin to bloom while the sugar syrup is cooking (at least 10 minutes). Place the bowl in your mixer, with the whisk attachment.

When the sugar syrup reaches the right stage, remove it from the heat and let the bubbles subside. While the mixer is running on medium - low speed, pour the sugar syrup into the gelatin, along the wall of the bowl (this is to prevent the gelatin from being scorched by the hot sugar syrup). Add the salt and increase the speed to medium - high.

Whisk on medium - high for 3 - 5 minutes until the marshmallow base is doubling in size and is white, fluffy and smooth. Mix for a further 3 -5 minutes on high speed, allowing the marshmallow to volumize more (upto 3 times).&nbsp; Do not mix if the marshmallow base is already cooled down, as this will create tough marshmallows. (You can whisk the marshmallow on high for about 5 - 6 minutes to shorten the time as well, just make sure the base is fluffy, white and upto 3 times more than the initial volume)

While the marshmallow base is whisking, prepare the pan and utensils you will be using. Rub an 8 x 8 inch pan with shortening or butter (you can line this pan with parchment paper if you prefer). Brush all the utensils - spoon, spatulas with the same fat as well.

Optional - whisk the 2 egg whites in a clean metal bowl until you have stiff peaks. Set aside until needed.

Add the vanilla, (and egg whites - if using) to the marshmallow base and whisk for a further minute on high speed to combine the vanilla (and egg whites).

Scrape the marshmallow base into the prepared pan using an oiled cake spatula or flexible scraper. Spread the marshmallow evenly in the pan using the oiled spatula.

Sieve confectioner’s sugar over the top of the marshmallow and allow the marshmallow to set for at least 6 hours.

Turn the set marshmallow out onto a work surface dusted with dusting powder. Cut the marshmallows with an oiled knife or a pair of scissors. Toss the marshmallow in the dusting powder and store in an air-tight container.

Homemade Marshmallow Base

Mix the confectioner&#039;s sugar and cornstarch together until well combined. Set aside until needed.  There is more than enough for multiple batches. I like making extra so I can store my marshmallows with some of the dusting powder and store the rest for another batch.
