Ginger Pecan Brittle with Chocolate Drizzle

(200 grams) sugar

(170 grams) light corn syrup (golden syrup)

(60 milliliters) water

sea salt

(120 grams) pecans, roughly chopped

tbsp chopped candied ginger (crystallised ginger)

tbsp unsalted butter (room temperature (or dairy free butter to make it vegan))

tsp baking soda ((bicarb of soda))

Line a large baking tray that has sides with baking parchment paper and prepare and measure all ingredients before starting.

In a large heavy-bottomed high sided saucepan, bring the sugar, syrup, water and sea salt to the boil, stirring until the sugar has dissolved. Stir in the chopped pecans.

Continue stirring and use the Thermapen digital food thermometer to check the temperature until it reaches 150C/300F.

Working quickly, remove the pan from the heat and carefully stir in the butter, crystallised ginger and soda. Immediately pour the mixture into the prepared tray and spread it out with a spoon.

Allow to cool, then cut into pieces.

Meanwhile, melt the chocolate in a bowl over a pan of simmering water. Drizzle the melted chocolate over the brittle and allow to set.

The ginger pecan brittle can be stored in an airtight container for up to two weeks. Perfect for a Christmas gift!

Chocolate Pecan Turtle Clusters Recipe

Ounces Rolo candies (1 bag has 50 Rolos)

Mini Pretzels

Pecan Halves (Roasted)

Preheat the oven to 350 degrees. Line with foil or parchment paper for easy clean up.

On a baking sheet, arrange the pretzels in a single layer. Unwrap and place a Rolo on top of each pretzel. Place in the oven for 3 minutes. Note: do not leave the candy in the oven too long or it will be too melted and runny to work with. I will fill two large cookie sheets at once for even faster candy nut cluster making.

Remove the cookie sheet from the oven and place a pecan half on top of each Rolo, making sure to push down just a bit.

Place somewhere at room temperature or a bit cooler to let the caramel set.

A few years ago, my sister-in-law made these chocolate, caramel, pecan, and pretzel clusters. Unfortunately, she put the goodie tray in front of me when we were playing cards. I think I ate 15 that evening. Certainly not good for my diet, but they were a bit addicting. Just had to get the recipe.

(16-ounce) package dry roasted unsalted peanuts

Pour salted and unsalted peanuts into the bottom of a crockpot. Add the chocolate chips, chocolate bars, and white almond bark.

Cook on low heat for 1 1/2 to 2 hours, stirring the mixture with a wooden spatula at the 1-hour mark.

Drop spoonfuls of candy onto sheets of wax paper. Let candy sit at room temperature or in the fridge to set, about 1 to 2 hours. Serve and enjoy!

Butterfingers, crushed

Setup a double boiler and add milk chocolate, butter and peanut butter to the mixture. Use a spatula to mix until it's smooth.

In a large mixing bowl, add Chex cereal and broken Butterfingers.

Pour the chocolate peanut butter mixture in chex bowl and gently combine with a wooden spoon.

Add powdered sugar to the Chex and gently toss again until all Chex are coated in sugar.

Seal in an air-tight container or store in a Ziploc bag and enjoy!

Homemade Pecan Brittle

Line a rimmed baking sheet with a silicon baking mat or parchment paper and set aside. Have a small dish of water prepared along with a silicon brush.

Clip your candy thermometer to the side of a medium saucepan. Add sugar, water and salt to the saucepan and bring to a boil over medium heat, stirring occasionally.

Stirring occasionally cook until the temperature reaches 280 ℉. If the sugar begins to crystalize brush down the sides of the pan with water using a silicon brush.

Stir in the butter and pecans and cook until the thermometer reaches 300℉, stirring frequently.

Once the temperature has reached 300 ℉ remove the pan from the heat and stir in the vanilla and baking soda.

Remove the thermometer from the pan and pour the brittle mixture into the baking pan. Spread the mixture out and set the pan aside to let the brittle harden (about 30 minutes.

Break apart the brittle into chunks. Store in an airtight container with parchment paper in between layers for up to 1 week.

Had the same issue with the whole thing crystalizing as soon as I added the butter and pecans. I think it's dropping the temp too much
