Bring a large pot of heavily salted water to a boil over medium-high heat. Meanwhile, drain 4 cans sardines. Slice them open and remove and discard the bones. Coarsely chop 2 tablespoons capers. Cut 1/2 medium lemon into wedges. Finely chop 2 garlic cloves and 2 anchovy fillets. 

Add 1 pound spaghetti to the boiling water and cook according to package directions until al dente, about 9 minutes. Meanwhile, start the sauce.

Heat 1/4 cup olive oil in a large skillet over medium heat until shimmering. Add the garlic, anchovies, and 1/4 teaspoon red pepper flakes, and cook, stirring frequently, until the garlic is softened and the anchovies are fragrant, about 2 minutes. Add the capers and cook until they begin to pop, about 1 minute.

Add 2 cans cherry tomatoes and their juices and 1/4 teaspoon kosher salt, stir to combine, and bring to a simmer. Add the sardines, reduce the heat to low, and simmer until the pasta is ready.

Using tongs, transfer the pasta to the sauce. Cook over medium heat and gently toss, adding pasta water 2 tablespoons at a time as needed, until the pasta is well coated and glossy with sauce. Taste and season with salt as needed. Serve immediately with the lemon wedges.

Canned sardines,

Fresh lemon, juice and zest

Red onion

Fresh herbs, finely chopped

Extra virgin olive oil, optional (Only add olive oil

Dijon mustard

sea salt (Add more according to your tastes)

Add sardines to a medium bowl and flake with a fork into chunky pieces. (See video.)

Add remaining ingredients and stir gently to combine.

Taste and adjust seasonings, if necessary.

BEST Sardines Recipe - A Delicious Way to Prepare Canned Sardines

Sardines rillettes is a quick to make appetizer best served with baguette or crackers. Use fresh or canned sardines, then mix with Greek yogurt, softened butter, lemon, fresh herbs, and capers. An approachable recipe for people just beginning to cook with sardines!

Sardine Rillettes

tins sardines in olive oil

Tbsp Greek yogurt

Tbsp unsalted butter (room temperature)

Tbsp chives (finely chopped)

Tbsp fresh dill (finely chopped)

lemon juice

salt

tsp black pepper

Remove the sardine bones. Use your hands or a small fork to gently open up each sardine (kind of like a book). The bones will be visible on one side of the fillet, and should easily lift away. Discard the bones, then place the fish fillets into a medium bowl.

Mash the sardines. Use a fork to gently mash the sardines into a paste-like consistency.

Add remaining ingredients. Add 4 Tbsp Greek yogurt, 2 Tbsp room temperature butter, 1 Tbsp capers, 1 Tbsp chives, 1 Tbsp chopped dill, lemon zest, lemon juice, ½ Tbsp Kosher salt, and ¼ tsp black pepper. Stir gently to combine.

Refrigerate. Cover tightly, then refrigerate rillettes for 1 hour. Serve.  Allow the rillettes to come up slightly to room temperature, then serve with crackers or baguette.

Tablespoons capers (Likewise, MINA is our favorite)

Herbs (fresh basil and fresh oregano leaves)

salt and pepper

spaghetti (cooked)

Pasta water (to make a sauce)

olive oil (MINA is our favorite)

lemon (zested)

chilli flakes (optional)

To make pasta with sardines, you'll start with one skillet. A sauce pan or 10 inch skillet is what you need for the sauce and you'll begin with lots of quality olive oil. The first layer of flavor is garlic and lots of seasonal sweet cherry tomatoes.

When the tomatoes have burst slightly and released their juices, you'll add in the sardines. make sure you're using the  boneless type. It's super tricky to eat pasta when there are tiny bones that can be a choking hazard.

Then you'll add in the capers to the sauce and gently saute that with the sauce.

Finish off with plenty of fresh herbs which add so much brightness to the pasta. We love a combo of fresh oregano and fresh basil. We love a seasoning of salt, pepper and lots of chilli flakes --but that's completely up to you.

During the time when you're making this sauce, it would be the time to cook the pasta simultaneously. We love a spaghetti or linguine for this sardine pasta recipe, however any shape of your choice would work.

For a luscious and saucy pasta with sardines, we use our favorite trick--pasta water! Simply reserve a cup or so of the pasta water when draining it. That water is added in slow amounts to the sardine pasta as you toss the spaghetti in. You'll notice the sauce becomes creamy and luscious.

The final touch and the MOST important one! The sardine pasta is enriched with a hefty drizzle of quality extra virgin olive oil. Use quality olive oil here--you want to taste it! This will not cook, it's a topping :)

Serve right away and enjoy!
