Cheesy Eggplant Gnocchi Caprese is made with diced eggplant simmered in a garlicky tomato sauce with gnocchi, spinach, melted bites of fresh mozzarella and fresh basil.

Cheesy Eggplant Caprese Gnocchi Skillet

Delallo gnocchi (or gluten-free gnocchi)

olive oil

onion onion (chopped)

tsp kosher salt

eggplant (diced)

garlic (crushed)

container baby spinach

tomato paste

San Marzano Style crushed tomatoes

basil

mozzarella cheese balls

Bring water to a boil, cook gnocchi according to package directions and drain.

Meanwhile, set a large nonstick skillet over medium heat and add the oil.

When the oil is warm, add the onion, eggplant and salt to the pan and saute for about 3 minutes, or until it begins to soften, then add the garlic and cook until fragrant, about 1 minute.

Gradually add the spinach, stirring until it wilts. Once it’s all in the pan, saute for 1 to 2 minutes, or until it cooks down.

Push it to one side of the pan with your spoon and add the tomato paste, stirring until it smells lightly caramelized and toasty.

Pour in the can of tomatoes and decrease the heat to medium.

Cover the pan and cook for 5 to 6 minutes, or until the eggplant is tender.

Add the cooked gnocchi, place the mozzarella on top, cover the pan and cook 3 to 5 minutes, or until the mozzarella is melty.

Garnish with torn fresh basil and serve.

Tbsp. Organic Extra Virgin Olive Oil

Tbsp. Tuscany Spice Blend

pkg moz.zarella cheese pearls

pkg cherry tomatoes

6-8 basil leaves, sliced

pkg short bamboo skew

Preparation

PLACE moz.zarella balls, pepperoni slices, and cherry tomatoes in a medium bowl.  DRIZZLE with 2 Tbsp. Organic Extra Virgin Olive Oil and 2 Tbsp. Tuscany Spice Blend.  TOSS to coat.  PLACE on skewers in order: 1 basil leaf, 1 pepperoni slice, 1 cherry tomato, 1 moz.zarella ball.  SERVE on a platter creating a unique presentation!

Caprese salad is a classic Italian summer dish,so adding chicken just made sense. Caprese Chicken is all the flavours of the salad, but with added protein.

Caprese Chicken

chicken breasts

mozzarella (grated)

cherry tomatoes (halved)

red onion (finely diced)

basil (chopped)

tbsp garlic granules

oregano

sea salt and black pepper

tbsp balsamic vinegar

On the hob (stovetop), heat some oil in a large, oven-proof pan and add the chicken breasts. Season with garlic granules, dried oregano, salt and pepper. Keep turning the chicken until it has browned on all sides.

Add the cherry tomatoes to the pan.

Add the balsamic vinegar to the pan. Put the pan in a preheated oven at 200°C/400°F/Gas6 for 30 minutes.

Remove from the oven and cover each chicken breast with equal amounts of mozzarella.

Return to the oven for 5-10 minutes, or until the cheese has melted. Sprinkle with chopped basil and serve.
