Caprese Pasta Salad

oz mini penne pasta (cooked, drained and cooled)

oz teardrop tomatoes (sliced lengthwise)

mozzarella balls

basil leaves (torn)

black olives (drained)

parmesan cheese

Cook pasta per package directions. Drain and place in a large salad bowl to cool.

Vegan Caprese Salad with Peaches &amp; Arugula

baby arugula leaves

balsamic vinegar

flaky salt

medium-sized ripe tomatoes, sliced

Use a sharp serrated knife to slice the mozzarella and tomato into about 1/4 inch thick (or thicker if you like) slices.

Nice explanation and tips for assembling this dish. I would always bring something like this for a potluck or holiday party when I worked at a hospital. Some bozo would ask me for the recipe every damn time.
