3 Ingredient Vegan Caramel Sauce

In a small pan or pot, add the coconut cream, brown sugar and cornstarch. Heat over medium-high heat, stirring constantly while the coconut cream melts. The mixture will get bubbly and almost foamy. Lower the heat to a simmer and stir frequently for about 5 minutes. If you want salted caramel, add a pinch of salt.

Remove from heat. The caramel can be used immediately, or let it cool and it will thicken considerably. Each time you go to use it, give it a good stir. Store leftover caramel in a covered glass container in the refrigerator for about a week.

Easy Caramel Sauce

Add the sugar and water to a 3-quart heavy bottomed saucepan; stir a little so it sits in a flat, even layer.

Warm pot over medium heat and cook until the sugar dissolves, turns clear, and starts to bubble. (It will be cloudy at first, but will turn into a clear, bubbling liquid.) This takes about 3-4 minutes.

(At this point, do not stir again - simply allow to bubble, swirl the saucepan occasionally and brush down the sides of the pan, as needed, to prevent crystallization.)

Sugar will form clumps, but continue swirling and cooking until the mixture thickens and turns a deep amber color like honey (this can take anywhere from 8-12 minutes), keeping a watchful eye so the mixture doesn’t burn.

Carefully add the butter and whisk until completely melted. (The caramel will bubble up rapidly, so be careful and continue to whisk.)

Remove the saucepan from the heat and slowly pour in the cream, whisking continuously until all of the cream has been incorporated.

Whisk in the vanilla and salt.

Set aside to cool in the pan for 10 minutes.

Then pour into a lidded glass jar and allow to cool completely. (It will thicken as it cools.)

Place sugar with water in a saucepan. Place the pan over medium heat and bring to a boil. Keep an eye on the saucepan until the water evaporates and the sugar becomes golden brown. As soon as the sugar has reached the desired color, add the butter and stir vigorously with a whisk until butter is completely dissolved.

Separately heat the cream. Once the butter melts completely, pull the pan from the heat and add cream, stirring vigorously with a whisk. The composition will bubble and swell a lot at this stage.

Add the vanilla extract, salt and lemon juice and mix well.

How to Make Caramel Sauce

Heat the water and the sugar until golden brown.

Combine the water and the sugar in a small saucepan.  Place over medium low heat and heat until the sugar is dissolved, picking up the pan by its handle and swishing the liquid in the pan gently from time to time (see Note). DO NOT STIR (this is hard, I know, being a person who feels the need to do something to the food that is cooking on the stove).  When the sugar has dissolved, turn up the heat to medium high, bring to a boil, and let it bubble away until it turns golden brown, swirling from time to time, about 12 minutes (no stirring!).

Whisk in the cream, vanilla and salt and let cool.

When it has reached a deep, rich, golden amber color, but absolutely before it starts to burn (the color develops quite quickly at the end and darkens a bit further after it comes off the heat; pay close attention), take it off the heat, and slowly, gradually whisk in the heavy cream, which will cause the mixture to bubble up and sputter, and maybe get lumpy for a minute; don’t be scared.  Whisk until it is well combined and smooth, and add the vanilla and the salt. Cool the mixture; it will thicken considerably as it cools.

Imagine the flavor of salted caramel infused into a soft and moist banana bread, then drizzled with a warm salted caramel sauce on top.

Salted Caramel Banana Bread

(57 grams) salted butter

(220 grams) packed light brown sugar

(125 milliliters) heavy cream

tsp (2.5 grams) salt

(114 grams) unsalted butter, softened

(150 grams) granulated sugar

eggs

tbsp (60 milliliters) milk

tsp (5 milliliters) vanilla extract

(250 grams) all-purpose flour

baking powder

tsp (5 grams) baking soda

(245 grams) mashed bananas

(125 milliliters) salted caramel sauce

Stir together all the ingredients in a small saucepan. Cook over medium-high heat while stirring frequently until all of the sugar is dissolved, and bring to a boil.

Reduce the heat to low and let simmer for 5 minutes. Do not stir.

Remove from stovetop and pour into a heatproof jar. Let cool.

Meanwhile, preheat the oven to 350F and grease a 9&#215;5&#8243; loaf pan.

Using an electric mixer, cream together the butter and sugar in a large bowl. Mix in the eggs, milk and vanilla.

Stir in the flour, baking powder and baking soda until almost combined. Fold in the bananas and caramel until just combined.

Spoon into prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Let cool and drizzle with more caramel sauce before serving.
