Easy healthy frittata. Substantial enough to serve as a dinner entree, tasty enough to serve at a brunch party. Goat cheese, caramelized onions, green onions, and tomatoes bring a lot of flavor to this healthy dish.

Healthy Frittata with Caramelized Onions, Goat Cheese and Tomatoes

Large Yellow Onion (Halved then sliced)

olive oil

Large Eggs

Heavy Cream

Salt

tsp Black Pepper

Green Onion (chopped)

Crumbled Goat Cheese

Cherry Tomatoes (halved)

Heat a 10-12 inch oven-safe round skillet over medium heat on the stove. Add olive oil.

Add yellow onion slices to pan and stir every minute or two while onions cook.

Cook until they have softened and are golden brown. Add a pinch of salt.

Caramelized Onions

Preheat oven to 400°F while you cook the onions.

In a large mixing bowl crack all eggs and mix well with a whisk.

Add salt, pepper, and heavy cream and whisk again.

Stir in green onion, caramalized onions, and goat cheese.

Pour mixture into pan.

Place tomato halves all over the egg mixture.

Cook on medium low on stove for 3 minutes.

Bake in the oven for 12-15 minutes until all of the eggs have cooked and frittata is fully set.
