Stuffed Baked Artichoke Halves

<pre>Preheat the oven to 350 °F.</pre>

<pre>Clean and trim artichokes, removing the tough outer leaves. Leave a little stalk. Cut in half and remove the fuzzy choke. Blanch in a pan with equal parts water and wine, a drizzle of oil and a pinch of salt. To blanch artichokes cook for 4 minutes from when the water and wine start to boil. Remove with a slotted spoon and set aside.&nbsp;</pre>

<pre>Remove the crust from the bread. Pulse in a mixer with 4 Tbsp. grated cheese, salt, ground pepper and plenty of minced herbs.&nbsp;</pre>

<pre>Grease a baking sheet&nbsp;with oil. Fill artichokes halves with stuffing and place on the tray cut side facing up. Drizzle with oil and bake for 10 minutes. Pour 1 cup broth over artichokes, cover with aluminum foil and bake for another 15 minutes.</pre>

<pre>Remove from the oven. Serve hot, if you like with cooking liquid.</pre>

Cut 1 lemon in half and squeeze juice into large bowl; add lemon halves. Fill bowl with water. Working one artichoke at a time, trim, cut into wedges; add to lemon water.&nbsp;

Cook 3 artichokes in a pan with olive oil, salt, and 1 cup broth for 15-20 minutes. Blend and strain to obtain a purée.

Prepare mayonnaise by combining the egg yolks with 1 tsp. mustard, 1 tsp. lemon juice, a pinch of salt, and some freshly ground pepper. Whisk until blended around 30 seconds. Gradually add 1/2 cup sunflower seed oil in a very slow stream, whisking continuously, until thick. Combine mayonnaise with artichoke puree.&nbsp;

Combine flours and sparkling water to prepare the batter.&nbsp;

Heat sunflower seed oil to 350°F and line a plate with paper towels.&nbsp;

Coat wedges of 2 artichokes in batter and fry for 3 minutes. Dry on paper towels and season with salt. Serve with the remaining raw artichokes wedges, mayonnaise, arugula, chopped hazelnuts, and Pecorino shavings.

Artichoke season is nearly over. What better way to celebrate than with lamb and minty artichokes; a match made in heaven. 

Lamb Chops With Artichokes

Preheat the oven to 500°F.&nbsp;

Finely chop the leaves from 3 sprigs of thyme and the needles from a sprig of rosemary. Coarsely crush the breadsticks and mix with the chopped herbs and a generous pinch of salt.

Lightly oil the lamb cutlets, season them with salt and pepper, massaging the chops a little. Bread the cutlets thoroughly with the herb-breadcrumb mixture and bake them at 500°F for 10-15 minutes, depending on how well you want them cooked.

For the artichokes: Clean the artichokes. Cut them in half and use a melon baller to remove the central “choke.” Immerse them in a bowl of water with the juice of 1/2 lemon.

Chop 2-3 mint leaves. Cut the artichokes into very thin slices and sauté them for 5 minutes in a pan with a little oil, a pinch of salt and 1 crushed garlic clove. Remove from heat and sprinkle with chopped mint leaves. Serve with the cutlets.&nbsp;

Artichokes alla Romana: Preheat the oven to 350°F. Fill a bowl with water and halve and squeeze 2 lemons into it. Trim and clean all artichokes. Transfer cleaned artichokes to bowl of lemon water as you go. Mince 2 cups parsley, 5 mint leaves and 1 garlic clove. Put them all in a bowl and season with 2 Tbsp. oil, salt and pepper to taste. With a melon baller, remove the chokes from 4 artichokes. Stuff with minced herbs and set them, upside down, next to each other in a tall baking dish (5 1/2" across). Sprinkle with salt and cover with 1 part water to 2 parts olive oil. Bake for around 1 hour.

Artichokes alla Giudia: &nbsp;Heat oil over medium-high heat to 350°F. Open 4 artichokes like flowers by gently opening the leaves and pressing them as flat as possible. Dry them, season the insides with salt and pepper. Fry for 10 minutes in enough olive oil to cover them halfway. Turn over and cook for another 10 minutes. Serve.&nbsp;

Fried Artichokes: Bring peanut oil to 350°F over medium-high heat. Beat the eggs with 2 Tbsp. oil, 2 Tbsp. flour, salt and pepper. Cut the remaining artichokes into 4 wedges, dip them in the batter and fry for 3 minutes.

Serve one piece of each preparation per person. Serve hot.&nbsp;

Incredibly tender artichokes stuffed with mashed potatoes make for a hearty vegetarian side dish.

Trim the artichokes, removing the tough outer leaves and stems; snip the tips generously and trim the bottoms. Stew the artichokes with a drizzle of oil, 5 unpeeled garlic cloves, salt and pepper in a saucepan, covered, for around 15 minutes.&nbsp;

In the meantime, mash the boiled potatoes with a potato ricer. Beat the egg yolk with 4 Tbsp. oil and stir in the mashed potatoes and salt and pepper, until you have a soft mixture.

Fill the cooked artichokes with the mashed potato mixture, top with their hot cooking liquid, including the garlic cloves, garnish with chervil leaves and serve immediately.

Artichokes are in season and we can't get enough of them. Stuffed with breadcrumbs, cheese and capers, these tender artichokes make a hearty meal.

1 1/2OZ. Grana Padano PDO

Put the breadcrumbs, Pecorino, Grana Padano, capers, parsley in a blender with 1 1/2 Tbsp. oil and 1 1/2 Tbsp. wine. Blend everything coarsely.&nbsp;

Fill a large bowl with water and juice from 1 lemon. Clean the artichokes, removing the tougher outer leaves and place them the lemon water so that they remain vibrant.&nbsp;

Make an incision in the side of each artichoke, open them slightly and stuff them with the blended mixture pressing gently. Tie them with kitchen twine to retain their shape.

Place the artichokes in a pot with 2 Tbsp. oil, 1 garlic clove, salt and pepper and cook over high heat for a couple of minutes, then add the remainder of the wine, cover and reduce the heat. After 20-25 minutes, remove the lid and continue cooking for 10 minutes to let the liquid evaporate. Serve the stuffed artichokes piping hot.
