Carnivore Meatballs (Zero Carb &amp; Keto Option)

beef

salt

mozzarella cheese (shredded)

parmesan cheese (grated)

Italian Seasoning

garlic powder

Preheat

Mix meat and salt in a bowl or combine all ingredients for the keto option.

Form

Form 2-ounce balls in the palm of your hand.

Bake

Arrange in a glass baking dish and bake for 25-30 minutes until cooked and juices run. I use a 9x13-inch (23x33-cm) glass dish. If you have something smaller, pack the balls in snuggly. It’s fine if the meatballs touch slightly while cooking.

Serve

Remove from the oven and cool for 5 minutes. Serve warm.

I hate shredded mozzarella because it's always part skim and usually buy the full fat mozz, which would probably make the meatballs too watery. Otherwise they sound great.  What about using full fat ricotta cheese in them as opposed to the mozz?

Keto &amp; Carnivore are two totally different diets. Yes, similar but different! Garlic and Italian seasonings are not carnivore. Delicious recipes even if those are left out. The title of recipe and link are misleading if you’re searching for carnivore exclusively.

I made the Keto version of your Meatball recipe - easy, tasty, delicious, nutrient-dense, well accepted by other family members.  I fried them on the stove top and served them with vegetables. Thank you!

I make the zero carb version of these Carnivore Meatballs very often and absolutely love them. Tonight I served them with Carnivore Alfredo from your "The Carnivore Cookbook". OMG, why didn't I think of that before! Absolutely delicious! Thank you for so many terrific recipes!
P.S. I cook the meatballs in my Nuwave Brio Air Fryer Oven at 350 for 15 minutes. So easy.

Carnivore Bacon Cheeseburger Meatballs

Ground Beef ((80/20%

Bacon

Shredded Cheddar Cheese

Pork Rinds Crumbs ((use these pork rinds- amazon link))

Salt

optional: Black pepper, onion powder, and garlic (omit if strict carnivore diet)

Preheat the oven to 400°F (200°C).

Place all the ingredients in a large mixing bowl.

Mix everything until well combined. Form into meatballs.

Place on a baking sheet lined with parchment paper (a single layer, with enough space between each meatball).

Bake for 8-12 minutes until golden brown. Enjoy!

These are amazing. I made them in a square muffin tin I’ve got instead of meatballs and they were SOOO very good. I’ll be making them over and over. Easy and delish.

My family all agreed that these were “the best meatballs ever!” I added spicy brown mustard and New Mexico green chili powder and these were incredible!
