With plenty of great ingredients, this carrot and banana bread is also packed with flavor.&nbsp;

Healthy carrot and banana bread

all purpose flour

whole wheat flour (150 grams)

tsp baking soda (bicarbonate of soda)

tsp baking powder

cinnamon

tsp ground ginger

oz bananas (200 grams, approx 2 bananas)

3.5 oz dates

carrots (100 grams, finely grated)

eggs

vanilla essence

Preheat oven to 375F/190C.

In a large bowl, mix the dry ingredients (both flours, the baking soda, baking powder, cinnamon and ginger).

In another bowl, blend together the bananas and dates.

Add the grated carrot, eggs and vanilla to the mixture and mix well.

Add the banana mixture to the dry ingredients and mix so the mixture is well combined but don't over-mix.

Prepare a loaf tin by either lining on greasing it, then pour the mixture in and flatten the top, pushing the mixture into the corners.

Bake for 35-40min until a skewer comes out clean.

Carrot Cake Banana Bread

all-purpose flour

brown sugar (can sub coconut sugar)

baking soda

ginger

sea salt

cloves

nutmeg

bananas

carrots

apple sauce

cooking oil

EACH: chopped walnuts and raisins (optional)

cream cheese (softened)

butter (softened)

sugar

whisk dry ingredients

Preheat your oven to 350 degrees Fahrenheit. Grease a 5&quot;x9&quot; loaf pan with butter or cooking spray. Whisk the dry ingredients in a medium-sized bowl.

Mash the bananas in a large bowl then whisk in the eggs, grated carrots, apple sauce, and cooking oil.

Add the dry ingredients to the wet ingredients and fold the batter until only a few streaks of flour remain. Add the raisins and walnuts, if using, and stir a few more times.

Pour the batter into the loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Check the banana bread after 45 minutes and if the top is browning too quickly, tent it loosely with foil. Let the banana bread cool completely before removing it from the pan.

Once the banana bread is completely cool, beat the cream cheese frosting ingredients with electric beaters until the frosting is smooth and creamy.

Remove the cooled banana bread from the loaf pan and cover the top with the frosting. If you&#39;d like, decorate the top with a few chopped walnuts and a few pieces of shredded carrot.
