A super easy vegan alfredo using a few common pantry staples. The sauce doesn&#039;t need any preparation and is gluten free!

Easy vegan alfredo pasta

servings of pasta of choice

extra virgin olive oil (1 tablespoon of vegan butter

brown onion (chopped)

garlic (crushed)

(250 milliliters) dairy-free milk

(12 grams) nutritional yeast

salt (or

(25 grams) vegan cheese (grated (optional))

(~35 grams) mushrooms (sliced)

(~30 grams) baby spinach

Fill a medium-size pot with water and cook the pasta according to its packet directions. Skip this step if you are using zoodles.

In a large frypan over high heat, add the onion and oil. Saute for 3 minutes or until slightly softened. Add the garlic and saute for 1 minute or until fragrant. Add the sauteed onion and garlic to a high-powered blender.

Drain the cashews and add them to the blender with the milk, nutritional yeast, salt and cheese if using. Blend until the mixture is as smooth as possible.

If you&#039;re using any of the optional add ins: In the large frypan, saute the mushrooms in a dash of oil until golden brown. Add the spinach and saute for 1 minute or until wilted.

Add the creamy sauce to the frypan and heat through. If you used cheese, make sure it has completely melted. Add the pasta and mix until well combined. 

Divide the pasta between 4 plates and enjoy! The pre-prepared pasta can be stored separately from the sauce in an airtight container in the fridge for up to 3 days.

Vegan Fettuccine Alfredo

non-dairy milk (such as almond milk)

yeast

garlic

tbsp mellow white miso paste

onion powder

fettuccine pasta (gluten-free or grain-free if needed)

In a medium pot, bring 3 cups of water to a boil.

Add raw cashews to a bowl. Pour the boiling water over the cashews. Set aside to soak for 20 minutes. After, drain the water.

In a blender, add the soaked cashews, non-dairy milk, nutritional yeast, garlic, lemon juice, mellow white miso paste, onion powder, salt, and black pepper. Blend on high speed until completely smooth and creamy.

Cook the pasta according to the package instructions. After, drain the water and transfer the pasta back into the pot.

Pour the alfredo sauce over the pasta. Gently toss to combine and warm.

Serve fettuccine alfredo with fresh herbs of your choosing, such as basil or parsley. Enjoy!

Made this tonight, served it on chickpea noodles and steamed broccoli. My husband and I both loved it and have warm happy bellies:). Neither of us are vegan but it was absolutely delicious and will be in our regular comfort food rotation.

Geez Louise, that was one good bowl of pasta with YUMMY sauce. Literally, had only light in the fridge and was worn out after whole teaching day. It took seconds just to blend everything and mix. Two happy and full teachers sending hugs!

Amazing! I usually buy the vegan Alfredo sauce but the taste value was never the same. So
I gave up hope on bomb Alfredo sauce pasta.
Today I tried this recipe and OMG it was extremely good. I’m so happy you shared this. Mine wasn’t as  creamy it was more nutty since I used a food processor to blend the sauce so it reminded me of Parmesan cheese but still delicious

Soak cashew nuts in piping hot water for 5-10 minutes. You can do overnight soaking, but if you are in a hurry, boil water in a kettle and soak the cashew nuts for only 5-10 minutes.

When time is up, fill your blender. Add soaked cashews, dairy-free milk, garlic, nutritional yeast, nutmeg, salt, and pepper and blend them until smooth.

You can serve the sauce right away. If you pour it on pasta and veggies and warm them together in a frying pan, the sauce will thicken!
