Easy Italian Lasagna

Easy Italian lasagna

Finely chop garlic. Peel and dice onion and carrots.

Heat some olive oil in a large pot and sauté onions, carrots, and garlic. Add ground beef to brown, breaking it up with a cooking spoon. Season with salt and pepper.

Now, add crushed tomatoes and season again with salt and pepper. Simmer covered over medium heat for approx. 15 - 20 min. Stir in dried oregano.

Meanwhile, preheat oven to 200°C/390°F. For the béchamel sauce, melt butter in a small sauce pan. Add flour and sauté, stirring constantly to form a roux.

Add cold milk in portions and reduce over medium heat, stirring occasionally, for approx. 5 – 8 min. Season with nutmeg and salt and pepper.

Cover bottom of baking dish with a layer of meat sauce. Top with lasagna sheets and béchamel sauce. Repeat procedure until ingredients are used up. Finish off with béchamel sauce.

Top with freshly grated Parmesan and bake in preheated oven at 200°C/390°F for approx. 30 – 40 min. on the middle rack until golden. Serve hot in baking dish.

Tartiflette (French potato, bacon, and cheese casserole)

2.25 lbs floury potato

6.75 oz white wine

lb Reblochon cheese

Preheat oven to 200°C/400°F. Add potatoes to a pot of cold water. The water should be enough to cover the potatoes. Season with salt, then bring to a boil over medium-high heat and let boil for approx. 10 - 15 min., or until fork tender. Drain and let cool.

In the meantime, peel and mince onions and garlic. Roughly chop bacon. Heat olive oil in a large pan over medium heat and sauté bacon and onions for approx. 3 min. Add garlic and sauté for 2 min. more. Deglaze with white wine and let cook for approx. 2 min.

Peel and slice cooked, cooled potatoes. Add half of the potato slices to a baking dish. Season with salt and pepper and top with half of the bacon-onion mixture. Layer over half the sliced Reblochon and repeat the process with remaining ingredients. Cover with milk and bake at 200ºC/400ºF for approx. 30 – 40 min., until the top is golden brown. Enjoy!

Preheat oven to 170°C/340°F. Peel and cut the clove of garlic in half. Rub baking dish first with cut side of the garlic and then grease with butter.

Basic potato gratin

Peel potatoes if desired and cut into thin slices. Arrange the slices in overlapping layers in the baking dish.

Generously season heavy cream with nutmeg, salt and pepper and pour over potatoes. Bake in preheated oven at 170°C/340°F on the bottom rack for approx. 40 – 45 min. until golden. Allow to cool for 5 min. before serving.

This super easy, comforting, and savory cassoulet with fennel, bacon, and Italian sausage will warm you up from the inside—the perfect meal on a cold day.

Bean cassoulet with fennel, bacon, and Italian sausage

8.5 oz canned white beans

fennel

3.5 oz smoked bacon (cubed)

oz Italian sausages

bouquet garni

white wine

21 oz canned whole peeled tomatoes

bay leaves

chicken stock

thyme

parsley

breadcrumbs

tbsp butter

Drain and rinse the beans. Cut out the stalk from the fennel. Clean and wash the bouquet garni, then cut into large pieces together with the fennel. Peel and chop the onion and garlic.

Add bacon and sausage to a large roasting pan and fry. Remove sausage from the pan and set aside. Then add onions and garlic to the pan and sauté. Add the bouquet garni and fennel and fry for approx. 2 - 3 min. Deglaze with white wine. Add the canned tomatoes, bay leaves, beans, and chicken stock. Let simmer for approx. 1 hr. Season with salt and pepper.

Preheat the oven to 170°C/ 375°F. Chop thyme and parsley and mix together with breadcrumbs. Return sausage to the roasting pan. Spread breadcrumb mixture over the cassoulet and drizzle with clarified butter. Let bake in the preheated oven for approx. 1 hr., or until a golden brown crust has formed. Enjoy!

Slice the zucchini, tomato, mushrooms, and mozzarella and set it all aside. Dice the onion and chop garlic. Place onion and garlic in a frying pan with some olive oil and sauté until golden. Add canned tomatoes, season with dried Italian herbs, salt and pepper and bring to a boil over medium-high heat. Meanwhile, cook the pasta in a pot of boiling water until very al dente, then drain and rinse under cold water. Set aside.

Preheat the oven to 180°C/350°F. Place half of the pasta in a baking dish, pour half of the tomato sauce over it and cover it with mushrooms and zucchini slices. Do the same for the second layer and drizzle the remaining olive oil over it.

Spread sliced tomatoes and mozzarella over the top and sprinkle with some Italian herbs, salt, and pepper. Place the baking dish in the oven for approx. 25 min. at 180°C/350°F or until brown. Serve with fresh basil and enjoy!
