This recipe works equally well for skin on and skinless pork belly. I cut back on the salt and sugar a bit from Dave Chang&#039;s original recipe.

Oven Roasted Crispy Pork Belly

fine salt (or 4 teaspoons kosher salt)

sugar

For skinless pork belly, move on to the next step. If using skin on pork belly, pat skin dry with a paper towel. With a sharp knife, score through skin every 1/2-inch at a diagonal, cutting through skin and into fat, but not so deep that you hit meat. Repeat cutting in an opposite diagonal to create a diamond shape pattern. (recipe note #1)

Season pork belly with salt sugar and a few grinds of black pepper. Cover and refrigerate overnight.

Preheat oven to 450°F.

Roast pork belly for 30 minutes on the middle rack in a heavy, oven-safe pan or skillet, skin side up / fat side up. Reduce heat to 275°F and roast for an hour or more, until tender but not mushy. (Larger pieces of pork belly will take longer. Our one-pound belly was done after an hour at 275°F.)

Remove from oven and let cool to room temperature. Wrap tightly in plastic and refrigerate until chilled through - at least a few hours and up to 2 days.

Once chilled, slice into thick pieces and brown in a skillet on the stovetop until crisp. Enjoy alone or in soups, salads, pasta sauces, ramen and more! (recipe note #2)

How to Make Pork Belly

Cod works great for these fish cakes, but any firm white fish or salmon will work well too.

Cod Fish Cakes

panko breadcrumbs

whole milk sour cream

eggs (lightly beaten)

rib celery (very finely chopped)

capers

green onion (or fresh chives)

kosher salt

olive oil (for frying, divided)

lemon

Preheat oven-safe serving platter in 250˚F oven.

Set out one large, clean plate or platter and one medium plate. Pour panko breadcrumbs onto medium plate.

Place cooked fish into a large bowl and flake into small pieces with a fork. Add sour cream, egg, celery, capers, green onion, salt, and pepper; stir to combine. Scoop out 1/8 of the mixture and use your hands to gently pack into a patty. Place on plate with panko crumbs and gently coat all sides with crumbs; transfer to platter. Repeat with remaining mixture.

Heat 2 tablespoons oil in a large skillet over medium heat until hot. Place 4 fish cakes in skillet and cook until crumbs are crisp and golden brown, pressing down gently with spatula to compress; about 5 minutes per side (turn gently). Transfer cooked fish cakes to warm platter. Repeat process with remaining oil and fish cakes.

Serve fish cakes hot with lemon wedges if desired.

Oven Roasted Root Vegetables

potatoes (2 medium)

sweet potato (1 large)

onion (1 large)

carrots (4-5 large)

½-1 tsp sea salt (to taste)

olive oil

garlic (minced)

½ tsp dried thyme

rosemary

Peel vegetables and cut into 1-1 1/2-inch pieces. Lightly grease a large cast iron skillet or baking sheet with olive oil.

Add all vegetables to the pan and top with olive oil, spices and minced garlic. Toss well to combine.

Roast the vegetables until tender and golden brown, stirring occasionally every 15 minutes to ensure equal browning. This takes about 45 minutes to 1 hour.
