Nothing fancy to see here - just a healthy, delicious, vegan burrito bowl combo featuring spicy roasted cauliflower, pico de gallo, creamy refried black beans, rice, corn, avocado, and a good lime drench.

Roasted Cauliflower Burrito Bowls

rice

olive oil

water

tomatoes, chopped

limes

cilantro

corn, kernels

avocado

hot sauce

Rice: Cook the rice according to package directions.

Cauliflower

Heat the oven to 425 degrees. Toss the cauliflower florets with the olive oil and half of the taco seasoning. Sprinkle with salt and pepper. Roast for 20-25 minutes, tossing halfway through to prevent burning.

Beans

Combine the black beans, water, and remaining taco seasoning in a small saucepan. Bring to a low simmer. Mash the black beans with the back of a spoon until the mixture starts to get creamy. It should continue to thicken as it stays over medium low heat.

Pico

Toss the tomatoes, onion, limes, and cilantro together to make a pico de gallo. Season with salt.

The Moment of Glory

Build a big bowl with rice, refried beans, corn, pico de gallo, avocado, and a lime wedge. Top the bowl with your roasted cauliflower and add your hot sauce if you want!

this has two of my three "go to's", cauliflower and black beans, but you've made them much more flavorful in this recipe and sheet panned too for the cauliflower, so thank you and for all including the walnut chorizo bonus!

I feel like cauliflower is an undercover health superstar. There are so many ways to make it and it can be used for so much.  It isn't quite as sexy as a quinoa or avocado, but you can't make pizza crust out of those... right? hmmm... quinoa pizza crust?

Another winner winner cauliflower dinner by pinch of yum. This had now been added to my 'easy-go-to healthy din' folder!!

I made this for my mom, step dad, husband and kiddos the night after you posted it and everyone LOVED it. Even though there were a few ingredients my kids didn't care for (I'm looking at you, tomatoes) we just didn't add those ingredients to the kids bowls. (The pico de gallo might have been my favorite tied with the cauliflower itself). Anyway, I love that the left overs could easily be thrown into a salad or another recipe. Everything was flavorful and guilt free. My husband said he could have this for dinner every week. Thank you for another regular rotation recipe :)

Made this for supper last night, and it was fantastic!!  I added a little  homemade mango salsa as well!!  This will go into the regular rotation!!

Fall Nourish Bowl - with roasted Curried Cauliflower, Lentils and Basmati Rice and refreshing Carrot Slaw with cilantro, scallions and a Turmeric Dressing. Vegan and Gluten Free!

Fall Nourish Bowl

dry lentils

cumin

coriander

brown basmati rice

cauliflower-

¼ onion, sliced – optional

salt

curry powder

carrots

scallions

baby spinach or arugula

———–

Dressing:

apple cider vinegar

maple syrup

turmeric

cracked pepper

cayenne

——–

Sprouts, sunflower or pumpkin seeds,

Cook rice and lentils according to directions, in separate pots on the stove.

Cut cauliflower into small florets. Slice onion thinly. Place on a baking sheet, toss with olive oil, salt and curry powder. Place in the oven to roast 25-30 minutes or until fork tender.

Grate carrot and toss with cilantro &amp; scallions.

Stir dressing ingredients together in a bowl.

When lentils are done, add cumin and coriander season with salt and drizzle of olive oil. Season rice with salt and pepper.

Assemble Bowls: Divide warm lentils, rice and cauliflower. Add spinach. Top with slaw and optional sprouts.Spoon Dressing over top. Add sprouts or seeds.

I just discovered this recipe recently and have made it several times. Sometimes I replace the lentils with quinoa for my son who prefers it over lentils. We both love it and it has made us fans of nourish bowl eating! Thank you for sharing :)

I love that your bowl recipes make it easy to put dinner together after a long day at work. This was simple - I didn’t have quite the delicate carrot shreds, but it tasted great still and felt like I was making good choices on a day that I day dreamed of french fries multiple times.

I was apprehensive on how my family would take this--they eat vegetarian because I cook it, but don't hesitate to eat meat. 3 out of four of us enjoyed this meal, one is veryyyy picky. I have to practice my lentil cooking, my local lentils don't come with instructions. Also, I had to quadruple the dressing for everyone because we are apparently heavy-handed with it. Overall, we enjoyed it and will make it again!

I was not expecting a lot from this recipe, since it looked so healthy. But it was GREAT! Exactly what I needed after a lot of weekend junk food. I skipped the lentils and roasted some chickpeas with the cauliflower instead. Super easy, healthy, flavorful, satisfying, refreshing, and cleansing. Will definitely make regularly!
