These low-carb Mexican cauliflower patties are everything! They are gluten-free and vegetarian, and will disappear in a flash, they taste THAT good.

Mexican spice mix (I used this one)

cheddar cheese (4 oz)

coconut oil

Bring 1 to 2 inches of water to a boil in a large saucepan fitted with a steamer basket. Preheat oven to 300ºF. Coat a baking sheet with cooking spray.

Add cauliflower to the steamer basket, cover and steam until the cauliflower is tender, 5 to 8 minutes. Remove basket from saucepan and allow to cool 10 minutes.

Meanwhile, stir scallions, eggs, cilantro, almond flour, spice mix and salt in a medium bowl.

Puree the cauliflower in a food processor fitted with a steel blade attachment until the cauliflower is paste-like, and becomes a little moist. It will not be completely smooth, more like small grains of rice. Add the cauliflower to the spice mixture and stir to combine. Add the cheddar and mix in evenly.

Heat 1 tablespoon oil in a large non-stick or cast iron skillet over medium heat. Mound scant ¼ cup portions of the cauliflower mixture into the oil. Cover with a lid and cook, adjusting heat to prevent scorching if necessary, until the cauliflower patties are set up and the bottoms are browned, 5 to 7 minutes. (If the patties seem like they will break apart they are not ready to flip.) Carefully flip the patties over and continue cooking until the second side is browned, and the patties are cooked through. Transfer the patties to the baking sheet and transfer to the oven to keep warm.

Repeat with the remaining 1 tablespoon oil and 4 portions of remaing cauliflower mixture, adjusting the heat if necessary. Serve with lime wedges and kosher salt.

Cauliflower Patties Recipe

cauliflower

(15 oz) can chickpeas ((rinsed and drained))

tbsp parsley (finely chopped)

garlic (minced)

coconut oil (for frying)

chickpea flour ((see notes))

tbsp ground flax seeds

onion powder

tsp cumin (ground)

salt and pepper (to taste)

Cook the cauliflower florets in salted water until tender (about 10-15 minutes), then discard the water.

Meanwhile, combine all dry ingredients in a bowl, and set aside.

Pulse all the wet ingredients (except the oil) in a food processor until combined (don&#39;t over-process, though. There should still be texture, not a paste).

Add the wet ingredients to the bowl of dry ingredients and combine with your hands.

Form 8-10 patties and fry them with a little oil in a large skillet on both sides (about 5 minutes each) until golden brown.

Serve with vegan sour cream, tzatziki, Ranch dressing, or tahini dressing,

This was awesome, Very versatile recipe to let you use up what is in your fridge.cupboard.  I used butter beans and frozen cauliflower, garlic powder and plain flour and dried basil. Point is you can easily swap things around and keep the same qualities.
I tried cooking some in the airfryer and rest in the saucepan. The saucepan was better as you need the oil for the moisture, flavour and light golden crust.

love this recipe,  made this for the first time and thought I would have to add more flour,  since I over blended,  however since the flax meal I used as a binder, made the over blending nonexistent and my mistake disappeared!! 😀

I've made this twice now, doubled recipe, and replaced chickpea flour with ground oats. So versatile, we've seasoned it as burgers and as falafels. Thank you for this fun, healthy idea for cauliflower!

Hi silly question but I want to make and freeze these. Do I freeze before or after cooking ?
