Low Carb Cauliflower Risotto

In a large saute pan, heat butter over medium heat until melted and hot. Add chopped mushrooms and garlic and sauté until mushrooms are tender and just turning golden brown. Season with salt and pepper.

Reduce heat to medium low, add cauliflower, and toss to coat in the butter. Add white wine and cook until the liquid has bubbled away. Add broth a few tbsp at a time, stirring frequently and letting it evaporate each time.

When cauliflower is becoming tender, add a little more broth and a few tbsp of cream. Cover with a lid and continue to cook, allowing the cauliflower to steam, until tender (adding a bit more broth and/or cream if needed).

Stir in the parmesan and add any additional salt and pepper to taste. Serve with additional grated parmesan as desired.

lbs cauliflower (1 small head of cauliflower,

brown mushrooms (sliced)

avocado oil

onion (finely chopped)

chicken broth (low sodium**)

Parmesan cheese (grated)

mozzarella cheese (shredded)

tbsp parsley (finely chopped)

In a food processor, add cauliflower florets in 3-4 batches and process until “rice” forms. The key to proper coarse rice texture is not to overcrowd the bowl of food processor. Transfer to a medium bowl and set aside.

Preheat large non-stick skillet on medium - high heat and add mushrooms. Cook until golden brown or about 5 minutes, stirring occasionally. Transfer to a medium bowl and set aside.

Return skillet to medium heat and swirl oil to coat. Add onion and garlic, sauté until translucent or about 3 minutes, stirring occasionally.

Add cooked mushrooms, cauliflower “rice”, broth, salt and pepper. Stir, cover and cook for 4 minutes.

Turn off heat, add Parmesan and mozzarella cheese and parsley; stir until cheese is melted. Serve warm with chicken of choice (I like almond crusted chicken).

Melt the butter over medium heat. Add the shallot and cook for 3 minutes, stirring often.

Stir in the garlic and cook for 30 seconds more.

Add the cauliflower and cook over medium heat for 10 minutes, stirring often.

Add the cream, Parmesan, salt, and pepper and stir well. Cook over medium heat, stirring occasionally, until cauliflower is tender and mixture is thick and creamy, about 5 minutes.

Stir in the parsley before serving.

I made this twice and absolutely love it! I used Cauliflower Rice found in the vegetable section at the market. It's my go to veggie.

I was hesitant to try this recipe because I couldn't believe a cauliflower risotto could be as good as a classic risotto, but it was. It was amazingly delicious. I will be making this again and again.

I used a bag of frozen cauliflower rice and it didn't get watery at all.
Also used 2% milk and it was fabulous.
