Traditional brutti ma buoni 'ugly but good' are a cookie made with hazelnuts, egg whites and sugar, found in Rome and central Italy. This savory spin uses fried cabbage and potatoes to make small ugly but tasty bites that are perfect for aperitivo time.

Small tasty but ugly bites

11OZ. savoy cabbage

2OZ. flour

anchovy sauce

olive oil

garlic

peanut oil

salt

pepper

Prepare the carrot sauce. Bring water to boil in a medium pan. Juice 1/2 lemon. Clean and peel the carrots and boil until a fork passes through them, around 10 minutes. Remove from the heat and puree with olive oil, lemon juice, salt and pepper. Set aside.

Crush the garlic clove and leave the skin on. Cut the savoy cabbage into strips. Heat a saucepan with a drizzle of extra-virgin olive oil over medium-low heat and brown the cabbage and garlic. Remove the garlic, add 1 cup water, cover and stew for around 15 minutes. Turn off the heat and chop the savoy cabbage coarsely.

Meanwhile in a frying pan, slowly bring peanut oil to 350°F.

Mash the boiled potatoes with a potato masher or a fork, mix them with the chopped savoy cabbage, flour, 1/2 beaten egg, 1 tsp. anchovy sauce, salt and pepper. Divide this mixture into small portions, around 2 tsp. each. Fry them in peanut oil. Serve hot with carrot sauce.

Lentil, kumara and cavolo nero stew

Onion,

Carrot,

Celery,

Garlic, chopped

Tbsp Olive oil

Dry herbs

Water, boiling

300 g Kumara, peeled and diced (Main)

Red lentils, well washed (Main)

Diced tomato, 400 grams

Cavolo nero, leaves, discard any thick stalks (Main)

Sauté the onion, carrot, celery and garlic in the oil in a large saucepan, until softened. Stir in the herbs, water, kumara and lentils. Cover and simmer for about 20 minutes until the kumara and lentils are just cooked. Add the tomatoes, seasonings and cavolo nero. Simmer until the cavolo nero is tender.

Great served in bowls topped with sour cream or coriander pesto. (1 bunch coriander, 2 tablespoons olive oil, 1 tablespoon lemon juice and 3 tablespoons pine nuts, puréed until smooth).

Cavolo alla Polonese di Monzù Gerardo Modugno

grossi cavolfiori

uova sode

250 g di provola affumicata

g di prosciutto cotto

g di parmigiano grattugiato

200 g di burro

dl di latte

80 g di farina

pizzico di noce moscata

Tagliare i cavolfiori a rametti grandicelli con i gambi più lunghi possibile, lessateli in un ampia pentola con abbondante acqua salata. Quando saranno cotti, scolarli con una schiumarola a rete e adagiateli sparsi su una teglia.

Mentre si raffreddano, tagliate la provola e il prosciutto a listarelle, lunghe quanto i gambi del cavolfiore, e mettetele in un piatto separatamente.

Con un coltellino, cavate i tuorli dall' albume sodo e metteteli in un passino a rete. Fatto ciò, tritate gli albumi in modo da ottenere una granella bianca e tenetela da parte.

Con il latte, 100 g di burro, 80 g di farina, un pò di noce moscata un pizzico di sale, preparate una besciamella leggera.

Imburrate una pirofila a bordo basso di 25 cm di diametro e disponete i rametti di cavolo a corona intorno al bordo con i gambi rivolti verso l' interno, fra gli incavi inserite, alternandole, le listarelle di provola e prosciutto. Infine. spalmate sopra la besciamella con un cucchiaio e distribuite un pò di granella del bianco sodo e parmigiano.

Ripetete la stessa operazione finché i rametti e le listarelle, disposti in questo modo, man mano che salgono, si chiuderanno riformando la forma del cavolo intero. Al centro resterà un piccolo foro che riempirete con altrettanti rametti.

Fate fondere un pò di burro, bagnateci dentro un pennellino e spennellate tutto il cavolo. Successivamente spalmate di besciamella su tutta la superficie e distribuiteci sopra la restante granella di bianco d' uovo e il parmigiano grattugiato.

Infine, strusciando i tuorli d' uovo sodo nel passino a rete, fateci cadere sopra una bella margherita e infornate a 180° per 15/20 minuti.

Prima di servire, lasciate riposare per 5 minuti.
