This&nbsp;recipe&nbsp;from Audrey Deane is a great way to use up that chunk of roast pork leftover from Sunday lunch, making it a perfect dish for the start of the week. Serve with pasta or rice or with a jacket potato.

Leftover pork roast ragu (slow cooker)

celery stick, finely chopped

carrot (peeled, finely diced)

onion (finely diced)

red pepper (deseeded and finely diced, optional)

½ courgette (finely diced, optional)

roast pork

bacon

passata

½ tsp Italian mixed herbs

pasta (rice potatoes

Put the diced celery, carrot and onion and any other vegetables into the slow-cooker basin

Add the cubes of meat and slivers of bacon

Pour over the passata, add the herbs and stir well

Place the lid on tightly and cook on LOW for 6–8 hours until tender

Serve with pasta, rice or jacket potatoes and sprinkle with parmesan

So simple to make and absolutely delicious.

Preheat oven to 300˚F. In a medium bowl sift together flour and salt.

In a separate bowl combine butter, honey, and vanilla. Add flour mixture into wet ingredients a little at a time and stir until fully incorporated. Fold in pecans.

Form into 1” balls and place on greased or lined cookie sheet about 2 “ apart from each other. Bake for 40-45 minutes.

Add powdered sugar to a small bowl. Allow cookies to cool for 5 minutes and then roll each one in powdered sugar.

In a large pot of salted boiling water, cook the macaroni to al dente. Drain and rinse with cold water. Place in a large bowl.

Add cucumber, green pepper, relish, onion, and mix together. Set aside.

In a small bowl, add mayo, sour cream, milk, and season with salt and pepper. Stir to combine.

Add dressing to macaroni mixture, then stir to combine. Add hardboiled eggs and gently fold to combine.

Cover and chill until ready to serve, preferably overnight.

celery salt

green bell pepper, finely diced

celery, finely diced

fresh parsley, chopped

cayenne pepper (optional)

To a large bowl, add the garlic powder, celery salt, mayonnaise, and macaroni, and toss to coat. Stir in cayenne, if using.

Stir in green pepper, celery, onion, and parsley, and season to taste with salt and pepper.
