These Champagne Jello Shots are made with champagne, ginger ale, lemon juice, sugar, and gelatin and are so easy to whip up for your New Year's Eve and other celebrations!

Champagne Jello Shots

champagne (or other sparkling wine)

sugar

lemon juice

gelatin ((2 envelopes))

ginger ale (or lemon-lime soda)

star sprinkles

Add champagne, sugar, and lemon juice to a medium saucepan. Sprinkle with the gelatin and allow to bloom for 3 minutes, do not stir.&nbsp;

Once the gelatin has bloomed, heat the mixture over medium-low heat and whisk until the gelatin has dissolved. Do not let the mixture boil.

Remove from heat and stir in the ginger ale,&nbsp;let carbonation fizz out and then evenly pour into shot glasses or small plastic cups and refrigerate for at least 2 to 3 hours until set.

Sprinkle with edible gold stars just before serving.

Mimosa Champagne Jello Shots

orange Jello mix

water

champagne (See Notes)

whipped cream (optional)

orange (optional)

Place the orange jello mix in a medium mixing bowl and add the boiling water. Stir with a spoon until the gelatin dissolves.

Add the cold water and champagne and stir again.

Line up your shot cups on a baking sheet or moveable flat surface.

Using an injector or pourable measuring cup, fill each shot cup ¾ of the way full.

Transfer the tray of Jello shots to the fridge. Chill for 2 hours or until gelatin is set. If you won’t be serving them right away, cover the shot cups with lids and store them in the fridge.

Before serving, garnish each cup with optional whipped cream and an orange slice. Enjoy!
