Champurrado is a thick, creamy, and chocolatey Mexican drink thickened with masa harina. It&#039;s a chocolate-based atole that&#039;s authentic.

(3-ounce) discs Mexican chocolate ((I used Abuelita brand))

cinnamon

water

masa harina

vanilla extract

Add milk, piloncillo, Mexican chocolate, and cinnamon stick to a medium saucepan or pot. Heat over low-medium heat until the piloncillo and chocolate have completely dissolved. Stir frequently to make sure nothing sticks to the bottom of the saucepan.

Remove and discard the cinnamon stick, using a strainer if it has broken into pieces.

In a small bowl, add warm water and masa harina. Whisk together until the mixture is smooth.

Add the masa harina mixture, vanilla extract, and salt to the saucepan. Whisk to combine.

Bring to a simmer, reduce heat to low, and continue to cook, whisking frequently, for 25-30 minutes until thick, creamy, velvety, and smooth. The champurrado should be thick enough to coat the back of a spoon.

Serve and garnish with a touch of ground cinnamon or a cinnamon stick.

oz Mexican chocolate (two 3-ounce discs (See Note 2))

oz piloncillo ((See Note 3))

Add the milk, Mexican chocolate, piloncillo, vanilla, salt and cinnamon stick to a medium saucepan. Heat over medium heat until the chocolate and sugar are dissolved. Stir frequently, about 3-5 minutes. Discard the cinnamon stick.

In a 4 cup measure, whisk together the warm water and masa harina until smooth. Carefully pour into hot choclate milk mixture, whisking to avoid lumps forming.

Bring to a simmer, reduce heat to low, and continue to cook for 25 minutes until thick, stirring frequently. Test - should coat back of spoon.

Serve with Mexican pastries like Conchas or Marranitos.

Choco Tacos with Champurrado Ice Cream

Mexican cinnamon,

cloves

allspice

tbsp honey

disc chocolate Abuelita, chopped into smaller pieces

heavy cream

sugar

brown sugar

tbsp Heirloom White Corn Masa Harina

milk (second addition)

oat flour

salt (a pinch)

tbsp milk

butter, melted and cooled

chocolate

coconut oil

peanuts, diced

In a medium pot over medium heat, add water, cinnamon stick, clove, and allspice. Bring to a boil. Turn off head and let steep for 20 minutes. Strain mixture to discard spices and add water back into pot.

Add honey, chocolate Abuelita, milk, cream, sugar, and brown sugar. Place pot on stove over low-medium heat. Once chocolate is melted, take an immersion blender and blend to emulsify chocolate well.

Gently add the ¼ cup of milk to the masa harina and mix well with a whisk. Quickly add this slurry to the pot while continuing to whisk. Using a thermometer, cook the base until it reaches 185F/85C. If you do not have a thermometer, cook until it comes to a gentle boil. Turn off heat.

Strain the mixture into a clean bowl and using immersion blender, blend once again to ensure a smooth ice cream base.

In a large bowl, prepare an ice bath with ice and cold water. Place the small bowl with the ice cream mixture on top of the iced water bowl and cool quickly. Once the mixture is cooled, store the mixture in an airtight container and refrigerate for 4-6 hours.

Freeze the ice cream in the ice cream machine of choice.

In a medium bowl, add oat flour, masa harina, salt and sugar. Mix with a whisk until well combined. Add milk, egg whites, and vanilla extract, whisk to combine. Finish by adding melted butter. Whisk until smooth.

Preheat a waffle iron and place about 2 tbsp of batter into the iron. Cook on medium heat for 45-60 seconds (no more, as the waffles will burn and be hard to shape.

As soon as the waffles are ready, quickly wrap them over a wood spoon or a metal canolli tube and let them cool for about 2 minutes.

For a cleaner waffle taco, you can use a 4” ring mold to quickly trim the edges as the waffle comes out of the iron and then shape them.

Store in an airtight container until ready to use.

Over a bain marie or metal bowl set atop a saucepan filled with water, melt dark chocolate and coconut oil on medium low heat. Mix well with a whisk and keep warm to prepare for dipping. Toast and chip peanuts into small pieces and reserve in bowl.

Gently use a spoon to add the ice cream inside the cooled waffle shell. Using a small offset spatula or a butter knife, smooth the top of the waffle shell so the ice cream is flushed with the edges. Individually wrap each waffle taco in plastic and freeze for about 1 hour.

Once waffle tacos are frozen, gently dip the top of the waffle taco into the chocolate, making sure to coat from side to side. Finish by sprinkling the peanuts on top.

AP flour

Mix all spices together. Reserve extra mixture to flavor hot chocolate and cocktail syrups.

Preheat oven to 350 degrees.

Cream butter and sugar in a bowl until fluffy, scraping the sides of the bowl halfway through.

Beat in egg, scraping as necessary, to emulsify with butter and sugar mixture.

In a separate bowl, whisk together dry ingredients (masa, flour, baking soda, baking powder, mission spice, and salt).

Add dry ingredients to wet mixture and stir until no dry spots remain.

Add chocolate chips and mix just until dough comes together.

Using a scoop or spoon, create egg yolk-sized balls and flatten slightly.

Place on a parchment lined baking sheet, 1 inch apart.

Bake for 10 minutes, rotating halfway through.

The Best Vegan Champurrado

In a medium-large pot, bring the cinnamon stick, star anise, and 2 &frac12; cups of water to a boil. Once boiling, lower the heat and simmer for 10-12 minutes. Strain the water to remove any chunks of cinnamon or anise, then add it back to the same pot.

In the meantime, whisk the masa harina, salt, and 1 cup of very hot water together in a bowl or container. Stir vigorously to remove as many clumps as you can. Set aside.

Grate or finely chop the piloncillo and chocolate, then add both to the pot of steeped water with the soy milk. Continue simmering, stirring occasionally, until the chocolate and piloncillo have dissolved, about 5 minutes.

Slowly pour in the masa harina mixture while whisking continuously. Turn the heat up to medium-high until the mixture comes to a low boil, then reduce the heat and simmer for 10-12 minutes until thickened.

Serve your vegan champurrado as a breakfast drink or dessert, or alongside snacks like churros, tamales, etc. Happy drinking!
