Falafel-spiced lamb wraps with turmeric tahini

tsp each ground cumin, ground coriander seeds

1kg boneless lamb shoulder,

(280 grams) thick Greek-style yoghurt

baby cos lettuce, quartered lengthways

(80 grams) green olives, sliced into cheeks

mint, leaves picked

(50 grams) flaked almonds, roasted

tbs white wine vinegar

tbs white soy sauce (from Asian supermarkets) or light soy sauce

Saffron couscous salad with green olives and chargrilled capsicum

chicken stock, heated

saffron

(150 grams) couscous

(150 grams) frozen peas, thawed

olive oil

lemon juice

tbs sherry vinegar

jar chargrilled capsicum strips, drained

red onion, thinly sliced

(40 grams) green olives, sliced

coriander leaves

Chilli flakes

100 ml Olive oil

ml Red wine vinegar

Sugar

Place all the ingredients in a food processor and blitz until a roughish paste.

Taste and season with sea salt and freshly ground black pepper. Refrigerate until required.

James Martin's cost-conscious cut of beef has heaps of flavour and stays moist from the marinade

Marinated bavette steak

x 250 grams/9 ounces bavette or flank steak

sunflower oil

soy sauce

garlic

ginger

juice ½ lemon, reserve lemon half

tbsp balsamic vinegar

tbsp honey

rosemary sprig, bruised

For the marinade, mix all the ingredients together in a bowl. Place the steaks in a shallow dish, pour marinade over to coat the meat completely. Cover, chill and leave to marinate overnight.

Scrape the marinade off the steaks and rub each steak with a drop of sunflower oil. Heat a griddle pan until very hot, then rub the steaks with the reserved lemon half and cook with the rosemary sprig for 3-4 mins each side for medium-rare, 1 min longer if you prefer it cooked more. Rest for 5 mins before serving with mash or chips.
