Combine lean chicken with super-healthy broccoli, ginger and garlic for a quick and cheap, weeknight dinner

Stir-fried chicken with broccoli & brown rice

trimmed broccoli florets (about 6), halved

chicken breast (approx 180 grams), diced

ginger,

garlic cloves,

red onion, sliced

olive oil

tsp mild chilli powder

tbsp reduced-salt soy sauce

tbsp honey

pack cooked brown rice

Put the kettle on to boil and tip the broccoli into a medium pan ready to go on the heat. Pour the water over the broccoli then boil for 4 mins.

Heat the olive oil in a non-stick wok and stir-fry the ginger, garlic and onion for 2 mins, add the mild chilli powder and stir briefly. Add the chicken and stir-fry for 2 mins more. Drain the broccoli and reserve the water. Tip the broccoli into the wok with the soy, honey, red pepper and 4 tbsp broccoli water then cook until heated through. Meanwhile, heat the rice following the pack instructions and serve with the stir-fry.

This Ravioli with Brown Butter Sage Sauce is delicious and so easy to make. This pasta dish tastes gourmet and takes a few minutes to make.

Ravioli with Brown Butter Sage Sauce

Wash and chop fresh sage. I chop the sage roughly and not too fine.

Remove the garlic skins from the cloves, and chop the garlic.

Julienne the basil.

Prep Ingredients

Place water in a medium to large pot and bring to a boil. Salt the water and add ravioli. Turn down the heat to a gentle boil.

Cook ravioli with a gentle boil for about 4 minutes.

Remove from stove and strain and rinse with cold water. Set aside ravioli for later.

Ravioli

On a low-medium flame, melt butter slowly in a light-colored pan. Keep stirring the butter, so they toast evenly. The butter will get foamy, and the butter bits will settle at the bottom of the pan.

The foam will begin to clear and you&#39;ll see the milk solids on the bottom. There are many colors of caramel that you&#39;ll see the butter turn. I like the medium-color of caramel.

Once your butter becomes light brown, begin making the sage sauce. Since the brown butter may burn, you&#39;ll want to have all your ingredients prepped and ready to go.

Add sage to the brown butter and cook. Watch the temperature since it can brown at this point. The sage will get crispy quickly, and it only takes a minute.

Once the sage is cooked, add minced garlic and olive oil to the butter mixture. Stir, and once the garlic is cooked, stir in pine nuts. At this point, add salt and pepper to taste.

Add the cooked ravioli to the pan and mix carefully.

Serve in pasta bowls and top with basil, chili flakes, and parmesan cheese.

To a large skillet over medium-high heat add the turkey. Break it up and cook through.

Add in the seasonings, mixed vegetables, and diced tomatoes. Stir well and let simmer covered for 5 minutes.

Stir in the cooked rice and let simmer for 3 more minutes, then serve.

Six Baked Chicken Leg Recipes

Preheat the oven to 425°F. Line a baking sheet with aluminum foil or use a baking sheet with a rack for crispier chicken.

Add the cooking oil, Italian seasoning, onion powder and garlic powder to a bowl. Add the chicken drumsticks and toss until evenly coated.

Place the chicken on a single layer on the baking sheet. Bake for 40-45 minutes, or until fully cooked.

Crispy Herb Chicken Legs

Preheat the oven to 400°F. Line a baking sheet with aluminum foil (or use a baking sheet with a rack for crispier chicken).

Melt the butter in a medium bowl. In a separate bowl, mix together the grated parmesan cheese, dried parsley, paprika, salt and pepper.

Pat the chicken legs dry with paper towel (this will allow butter to stick better). First, dip the chicken in the bowl of melted butter. Make sure to cover the whole chicken leg with butter.

Next, roll each chicken leg in the bowl of grated parmesan mixture or toss until evenly coated.

Crispy Parmesan Chicken Legs

Add the barbecue sauce, garlic powder, ground black pepper, paprika, cayenne powder and onion powder to a large bowl. Mix everything together.

Pat the chicken legs dry with a paper towel. Place them in the large bowl and toss to coat. Let them sit in the bowl in the fridge for 30 minutes to marinate.

Place the chicken on a single layer on the baking sheet. Brush a little extra of the barbecue sauce mixture onto each one. Bake for 40-45 minutes, flipping the chicken and brushing with more barbecue sauce mixed halfway through.

Barbecue Baked Chicken Legs

Preheat the oven to 400°F. Add the honey, soy sauce, vegetable oil, garlic powder, ginger powder, salt and pepper to a large bowl. Pour into a large ziploc bag or use a container.

Pat the chicken legs dry with a paper towel then place the chicken into the large ziploc bag (or container). Chicken should be covered enough with the ingredients. Marinate chicken in the fridge for 2 hours, flipping them halfway through.

Add 1 Tbsp of cornstarch and 1 Tbsp or warm water to a small bowl. Stir until it dissolves.

Use tongs to add chicken to a baking dish that isn’t too big. Next, add the cornstarch mixture to the sauce. Mix together until evenly coated. Pour the sauce into the baking dish over the top of the chicken.

Bake for 40-45 minutes, flipping the chicken halfway through. Drizzle extra sauce on top of chicken, rice, and pasta to serve with.

Honey Glazed Chicken Legs

Preheat the oven to 420°F.

Add the butter to the baking dish and place in the oven until it melts. In a separate medium bowl mix together the flour, paprika, salt and pepper.

Pat the chicken legs dry with paper towel (this will allow the coating to stick better). Add the chicken to the flour mixture and coat all sides.

Place the chicken legs in a singer layer in the baking dish with melted butter. Bake for 40-45 minutes, flipping the chicken half way through.

Oven Fried Chicken Legs

Mix the tomato sauce, brown sugar, white vinegar, worcestershire sauce salt and pepper in a large bowl. Stir together.

Pat the chicken legs dry with paper towel and place on the baking sheet. Brush each chicken leg with the sweet and sour sauce.

Bake for 40-45 minutes, flipping halfway through and brushing more sauce on to the chicken.

An easy one-pot meal for busy weeknights.

Soy Sauce Chicken Thighs with Broccoli

broccoli florets

white jasmine rice (to serve with (optional))

Cook rice in advance to serve with this recipe (this is optional). We use a rice cooker.

Cut each chicken thigh in half.

In a bowl, combine the water, soy sauce, ginger powder, and brown sugar.

Heat a large pot with a bit of cooking oil over medium high heat. Once the pot is hot, sear the chicken on each side until browned. About 5 minutes total.

Add the broccoli to the pot. Pour the sauce over top and toss everything together. Cover with a lid and let it simmer until the broccoli is tender crisp when poked with a fork. Scoop the broccoli and chicken onto a serving dish. Mix 1 Tbsp of cornstarch with 1/4 cup of water in a bowl. Pour into the sauce in the pot. Stir frequently and heat through until the sauce has thickened.

Serve this recipe with fresh rice. Drizzle the sauce from the pot over top of everything.

To a large Dutch oven or pot over medium heat, add the oil. Once hot, add in the bag of onions and peppers and sauté for 4-5 minutes to cook out the moisture in the vegetables. Add in the beans, corn, rice bag, seasonings, and water. Bring the mixture to a simmer, stirring occasionally, and let simmer covered for 7-10 minutes, or until the rice is tender. Make sure you stir occasionally while simmering, so the rice doesn’t stick to the bottom of the pot. Ladle into bowls and top with toppings. Enjoy!
