Romantic Valentine's Day Meal for Under $20

For the Duchess Potatoes

Yukon Gold potatoes, peeled and halved

(1/2 stick) salted butter, room temperature

heavy cream

salt and black pepper,

egg, whisked very well

For the Chicken Supreme

chicken

vegetable oil

salt

shallot (about 1 medium shallot)

lemon juice (about half a lemon)

Dijon mustard

chicken stock

salted butter, room temperature

For the Asparagus

asparagus, woody ends trimmed

salted butter

garlic clove,

lemon juice,

If you need to whip together a meal in 30 minutes, but you also want something delicious and comforting, steamed egg with minced pork is a simple recipe that you need to try.

Steamed Egg with Minced Pork

½ lb 20% fat ground pork (about 225 grams)

soy sauce

tbsp Shaoxing wine (or rice cooking wine)

½ tsp minced garlic (about a clove)

½ tsp freshly grated ginger

white pepper powder

Chinese five spice powder (optional)

sugar

corn starch

scallion (chopped)

eggs

water

sesame oil

rice

In a shallow bowl, mix ground pork with soy sauce, Shaoxing wine, garlic, ginger, white pepper powder, Chinese five spice, salt, sugar, and corn starch.  Finally stir in chopped scallion and set it aside.

Whisk eggs with warm water until smooth. Try not to incorporate too much air in it.

Pour the egg mixture into the shallow bowl through a sift and then gently loosen and evenly distribute the pork a bit. (See the picture in the post as a reference.)

Preparing

In a pot with a lid, bring 3 cups of water to a boil over medium heat. Insert a steamer basket/rack into the pot and place the bowl on top.

Reduce the heat to medium low and cover pot with lid, but leave a little opening and steam for 20-25 minutes or until the egg custard is set.  To check whether it&#039;s cooked through, poke a hole with a chopstick and see if there&#039;s any liquid coming out, if not, then the dish is ready.

Cooking

Once it&#039;s done cooking, remove the pot from the heat and let it cool for 5 minutes before taking it out. Drizzle with a bit of sesame oil and serve with warm rice.

Serving

Stir Fried Garlic Ramen Noodles is an easy and cheap recipe for dinner or a side dish, ramen noodles with no broth in a simple stir fry!

Stir Fried Garlic Ramen Noodles

noodles

onion (diced)

garlic

onions cilantro

sesame seeds, yum yum sauce, sriracha, protein of choice like chicken or shrimp

Boil the noodles according to package directions (throw away flavor packet), drain and rinse very well with cold water.

Set a large skillet or wok over medium high heat. Add the vegetable oil and the onion, cook a minute or two.

Add the garlic and cook for about 45 seconds and then add the cooked noodles, teriyaki or hoisin sauce, soy sauce, butter, and eggs.

Cook the noodles 5 to 6 minutes, stirring and mixing everything together. Press noodles into the skillet or wok with spatula to create crispy parts of the noodles if desired.

Add the green onions or cilantro and cook 1 to 2 more minutes. Taste for seasoning and add more teriyaki or hoisin and/or soy sauce if needed. Serve with sesame seeds, yum yum sauce, and/or sriracha and any cooked protein of choice if desired.

Chuck Roast Burnt Ends

Trim some of the thicker pieces of fat from the chuck roast and cut into 1 to 2 inch cubes.

Put the chuck roast cubes in a large bowl and add the olive oil, brown sugar, BBQ seasoning, kosher salt, and pepper. Toss until evenly coated.

Set the smoker to 225 degrees, place the chuck roast bites on the smoker grates for 2 hours, flipping them halfway through.

Remove the chuck roast bites and place in a 9x13 foil pan. Add the BBQ sauce, honey, and butter. Toss until evenly combined and cover with foil.

Place the covered foil pan back onto the smoker at 225 degrees for 1 1/2 to 2 more hours.

Preheat the oven to 350°F. Line a baking sheet with aluminum foil and lightly spray the foil with nonstick cooking spray (optional step).

Add the meatloaf ingredients to a large bowl and mix ingredients together.Classic Meatloaf: Mix ground beef, finely chopped onion, bread crumbs, milk, eggs, garlic powder, onion powder, and tomato paste.Stove Top Stuffing Meatloaf: Mix ground beef, stove top stuffing mix, onion, eggs, and milk. Taco Meatloaf: Mix ground beef, 2 cups crushed Dorito chips, chopped onion, taco seasoning, eggs and milk. Italian Meatloaf: Mix ground beef, chopped onion, breadcrumbs, milk, grated parmesan, eggs, Italian seasoning, and garlic powder.Brown Gravy Meatloaf: Mix ground beef, chopped onion, bread crumbs, milk, eggs, tomato paste, minced onion, garlic powder, onion powder and dried parsley.Pizza Meatloaf: Mix ground beef, chopped onion, bread crumbs, milk, parmesan cheese, eggs, dried parsley, dried oregano, and garlic powder.

Lightly spray a loaf pan with non stick spray and pack in the ground beef mixture. Flip the loaf pan and place it on to the baking sheet. Alternatively, you can add the mixture straight to the pan and form it into a loaf shape with your hands.

Bake uncovered and without the sauce for 40 minutes.

While meatloaf is baking, mix together the sauce ingredients. Once meatloaf has cooked 40 mins, remove from oven and spread sauce toppings on top and sides. Bake another 10 minutes (except for brown gravy meatloaf).Classic Meatloaf: Mix ketchup and white vinegar.Stove Top Stuffing Meatloaf: Mix ketchup and white vinegar.Taco Meatloaf: Use taco sauce and sprinkle more crushed Dorito chips and  shredded monterey jack cheese on top.Italian Meatloaf: Spread spaghetti sauce and sprinkle shredded mozzarella cheese on top then bake another 10 minutes. Brown Gravy Meatloaf: Prepare the package of brown gravy mix. Spread on after meatloaf is done cooking (no need to bake with gravy).Pizza Meatloaf: Spread pizza sauce over top and sides. Sprinkle mozzarella cheese on top.Meatloaf is cooked when an instant read thermometer reads a temperature of 160 F while inserted into the center of the loaf.

Remove from the oven and let meatloaf rest for 10 minutes before slicing and serving.
