Fried Brie Bites Are The Party App Of Our Dreams

Savory puffs filled with creamy goats&#039; cheese flavored by parsley, lemon and garlic. You&#039;ll love this take on classic gougeres! 

Cheese Puffs

all-purpose flour (120 grams)

water (240 milliliters)

tsp salt

tsp sugar

tbsp unsalted butter (113 grams)

eggs (Plus an extra for egg wash)

tbsp pecorino romano

oz goats' cheese (room temperature)

parsley

oz cream cheese

cream

lemon juice

tbsp minced garlic

tsp salt (to taste)

tsp black pepper (to taste)

In a medium bowl, beat together all of the ingredients until combined and smooth. You may adjust the amount of cream as some brands of goats&#039; cheese are smoother than others. The filling should be pipable but not runny. You may make the filling a day or two in advance and refrigerate.  Add more cream if needed to thin the mixture out if needed.

For the Filling

Preheat the oven to 425 degrees. Line a sheet pan with parchment paper.&nbsp;

In a medium saucepan bring the water, salt, sugar and butter to a rolling boil.&nbsp;

When it boils, immediately take the pan off the heat. Stirring with a wooden spoon, add all the flour at once and stir hard until all the flour is incorporated, 30 to 60 seconds. Return to the heat and cook, stirring for about 30 seconds.

Scrape the mixture into a mixer fitted with a paddle attachment (or use a hand mixer). Mix at medium speed. With the mixer running, add 4 eggs, 1 egg at a time. Stop mixing after each addition to scrape down the sides of the bowl. Mix until the dough is smooth and glossy and the eggs are completely incorporated. The dough should be thick, but should fall slowly and steadily from the beaters when you lift them out of the bowl.&nbsp;

Pipe 1 to 1.5 inch dollops onto the parchment paper-lined baking sheet. Tap down the points with a wet finger. Brush lightly with an egg wash and then sprinkle with the Pecorino Romano.

Bake at 425F for 15 minutes. Or until golden brown. If your puffs need additional time, lower oven temp to 375F. Pierce the bottoms with a skewer and allow to cool upside down.

Once cooled, poke a hole into the bottom of each puff and then pipe in the filling.&nbsp;

How to Make Cheese Puffs

Some of my favorite desserts are eclairs and creampuffs. If I ever make some version of them you know I will be eating most of the final product myself. And to be honest I will totally have some of the raw choux too... 😬 Anyhow, for a while now I wanted to make a savory version of a cream puff and fill it with cheese. I LOVED the goats' cheese spread I used in my spiral vegetable tart so I made a pipable version of that as the filling. Creamy goats' cheese, with a zing of lemon, the bite of garlic, salt and pepper for more flavor and minced parsley for color and a bit of extra depth. These were addictively good, like make multiple batches for a party and people will inhale them. If you have any little helpers in the kitchen, piping the dough and making and piping the filling are really easy and would be a fun little assembly line. How to Make Cheese Puffs

Creamy brie cheese is topped with sweet fig jam and wrapped in puffed pastry then baked up until golden and the center is melty and gooey. This makes the perfect date night or holiday appetizer and is sure to impress your guests!

Puff Pastry Baked Brie with Fig Jam

1, 8-ounce wheel of brie cheese (slightly chilled)

puff pastry dough (thawed)

All-purpose flour (for dusting)

fig spread

thyme leaves (about two stems)

Rosemary sprigs, chopped walnuts, and sliced dried figs (for garnish, optional)

Preheat oven to 350°F (177°C). Line a baking sheet with parchement paper and set aside.

Using a sharp knife, score the top rind of cheese in a criss-cross pattern, spacing cuts about 1 inch apart.

Roll puff pastry sheet out onto a large cutting board or work surface dusted with flour. Set cheese wheel in the center of the square, and top with 2-3 tablespoons of fig spread. Sprinkle thyme leaves on top.

Fold dough up and over the sides of cheese, pleating it on top to enclose the cheese wheel. Gently pinch dough together in the center to seal gathered pleats. You can tie a bit of kitchen twine on top to hold pleats together if you like, but this is not required.

If the dough is no longer cold after assembling, chill wrapped cheese for at least 20 minutes before baking. Prepared cheese wheel can be wrapped tightly with plastic wrap and refrigerated until ready to bake.

Place wrapped cheese wheel on prepared baking sheet and brush evenly with egg wash. Bake until puff pastry is crisp and golden brown all over, about 25 to 35 minutes. Let baked brie rest for 5 minutes, then transfer to a round serving board. Garnish with sliced figs and rosemary sprigs if desired. Enjoy!

Baked Figs with Goat Cheese

or 2.8 oz soft goat cheese

Preheat the oven to 200 °C or 390 °F. Cut off the stems and make an X cut in the top of each fig half way through.

Stuff the figs with soft goat cheese using a teaspoon. Sprinkle some chopped walnuts and sage over your stuffed figs and drizzle them with honey. Add salt and freshly ground black pepper to taste. I used Le Creuset rectangular  baking dish for this recipe and it was just the right size.

Broil for about 5 minutes or until they look soft and release juice. Serve them warm or cold with a glass of wine. Enjoy!

Pour marinade over cheese slices, cover and marinate in fridge at least 8 hours.

Queso Fundido

Preheat oven to 300°F. Remove the chorizo from its casing (if any) and grate the cheese on the largest holes of a box grater.

Set an oven-safe skillet over medium heat, and add the tablespoon of oil. Cook the chorizo for 7 to 8 minutes, until the fat renders and the sausage is bubbly.

Drain the fat from the skillet, reserving 3 tablespoons of chorizo for garnish.  If it&#39;s very greasy, place it on top of paper towels to get as much fat off of it as possible before putting it back in the pan. Top the chorizo with the grated cheese.

Place the skillet in the oven and cook for 5 to 7 minutes, until the cheese is melted and bubbly.  Place the skillet on a heat-proof surface, garnish with reserved chorizo, and serve immediately.

Sausage-Cheddar Bites

all-purpose flour

baking powder

cayenne pepper

cheddar cheese (about 2 cups shredded)

bulk breakfast sausage

½ large yellow onion (grated)

unsalted butter (melted)

Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper; set aside.

In a large bowl, whisk together the flour, baking powder, salt, cayenne and black pepper. Add the shredded cheese and toss to evenly coat with the flour mixture. Add the sausage, onion and melted butter, and mix until a cohesive mass forms. Using your hands, break off pieces of the mixture and roll into 1-inch balls (I used a small cookie scoop). Place on the prepared baking sheet about ½-inch apart.

Bake until the sausage is cooked through, about 25 to 30 minutes. Using tongs, transfer the warm sausage bites to a serving platter, insert toothpicks, and serve warm. These are best served as soon as they are baked, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.

Big, BIG hit at a friend's gathering this past weekend. Made it in a disposable pie pan from Dollar Tree, served with regular &amp; whole wheat crackers from Aldi. 
This was a super casual get together, I would likely use a nice, more decorative serving plate and fancier crackers had we not all been hanging out in pajamas. Every single person asked for the "recipe".

This is the best. We always make  it with the boursin cheese then top with fig preserves then the pistachios and then drizzle the hot honey on the top. I don’t think you can mess this up. This is my official appetizer of summer (OK and beyond). Flavorful, beautiful and overly easy. We served it with crackers and apples, but all agreed that thinly sliced honeycrisp apples are the chef’s kiss.

Prepare the gremolata

Place the garlic, parsley, and lemon zest together on a cutting board. Finely chop them until the mixture resembles fine breadcrumbs, using a mezzaluna knife if you have one for easier and quicker chopping, or a regular knife if not.

Cook the ‘Nduja

Drizzle a small amount of olive oil into a non-stick pan and heat over medium heat. Add the ‘Nduja and fry for about 2-3 minutes until it becomes slightly crispy, stirring occasionally to prevent burning.
