Throw a healthy slant on bruschetta by topping your wholemeal toast with cottage cheese, basil and contrasting balsamic

Layer the cottage cheese, red pepper and basil with some seasoning in a bowl or plastic container. Chill until lunchtime.

Toast the bread and cool for 1 min, then give the cottage cheese mixture a quick mix and spoon on. Drizzle with balsamic vinegar, if you like, and eat straight away.

Turbo beans & cheese on toast

Heat the oil in a heavy-based frying pan over a medium heat and fry the onion for 8-10 mins until softened and slightly caramelised. Add the garlic and spices, the chipotle chilli paste or chilli flakes, if using, and some seasoning. Fry for a few minutes more until the mixture is fragrant.

Add the tomatoes, then swirl out the pan using 100ml water and add this too. Simmer for 10-15 mins until the mixture has thickened. Blitz the sauce using a hand blender, then taste for seasoning. Tip in the beans and mix well to coat. Warm through over a medium heat for 5 mins until the beans are piping hot.

Heat the grill to high and toast the bread slices for 3-5 mins. Top with the beans and grated cheese, and pop under the grill until the cheese is melted and bubbling. Sprinkle with a little paprika and serve immediately.

A traditional British recipe, this perfect Welsh rarebit is the ultimate quick and easy lunch - made with a gooey cheese sauce, and grilled to perfection on crispy bread.

Perfect Welsh Rarebit

Tbsp (~ 15 grams) butter

Tbsp plain flour

120 ml (~ 1/2 cup) milk ((or

75 g mature cheddar cheese, (grated (~ 3/4 cup when grated))

tsp mustard (I used Dijon)

tsp black pepper

Begin by laying the slices of bread on a baking tray, and placing them under the grill (broiler), set to a medium-high heat. Cook for a couple of minutes until one side of the bread is golden brown and crispy. Then, turn each slice over and remove from the grill.

Meanwhile, melt the butter in a small saucepan, and add the flour. Mix well for 30 seconds, then add half of the milk. Stir well until the sauce is smooth, then add the remaining milk and mix again. The mixture should thicken up into a smooth, thick paste.

Add the grated cheese, mustard, and black pepper. Cook for another minute or two, stirring constantly, until the cheese has melted and the mixture is smooth.

Spoon the sauce onto the untoasted side of each piece of bread, gently pushing it to the edges with the back of the spoon (don&#39;t worry if it spills over the edges a bit!).

Place back under the grill (broiler) for about 5 more minutes, until the cheese sauce is just beginning to brown. Serve immediately.

Cheese on toast was always a childhood favourite of mine. This takes it to the next level. With or without the egg you have breakfast or lazy dinner!

Thermomix recipe: Indian Chilli Cheese Toast (Eggs Kejriwal)

Teaspoons Yellow Mustard

100 Grams Mature Cheddar Cheese cubed

red chilli

Handful fresh coriander or cilantro leaves

red onion

eggs

pink salt flakes

Black Pepper

Preheat oven to 180° and line a baking tray with baking paper.

Butter bread on both sides and lightly fry in a frypan. Smear one side of the toast with mustard.

Place cheese, chilli,  coriander and onion into the Thermomix bowl and chop *8 sec/speed 8*. Divide the mixture between the toast. Place in the oven for 10 minutes,  or until the cheese is melted.

Meanwhile,  fry the eggs until the white edges are crisp,  but the yolks are still soft.  Slide an egg on top of each toast.

Serve hot with additional chillies on top.

A yummy vegan version of the traditional Welsh Rarebit (aka poshed up cheese on toast!) Perfect for snacking on or serving up with some soup!

g plain flour

140 ml (140 ml) beer

140 ml plant milk

cook for a few seconds until the flour absorbs the oil and no longer smells &#x27;floury&#x27;

Slowly add the liquids (plant milk/beer/wine) whisking all the while to avoid lumps

Thicken

Once the liquid is incorporated the mixture should become quite thick.

Toast

Spread

Spread a layer of chutney (if using) and a layer of the cheesy saucey stuff you have just made

Grill

Put it all under the grill to heat up &amp; become bubbly &amp; golden. Sprinkle with a few drops of the vegan Worcestershire sauce if you like.

Serve hot!
