This hearty Cheese Tortellini Soup combines Italian sausage with cheese tortellini in an easy broth with tomatoes, onions, garlic, arugula and Italian herbs and seasonings.

Tortellini Soup

lb Italian Sausage

onion

garlic

basil

oregano

parsley

thyme

red pepper

beef broth

tomato paste

(14.5 ounce) can fire roasted tomatoes

vegetable broth

refrigerated tortellini

arugula (or spinach)

Parmesan Cheese

Brown the Italian Sausage in a Dutch Oven or stockpot over medium heat.  When it is almost fully browned add the onion and cook until the sausage is done browning and the onion has softened.  Turn the heat to low and add the garlic, basil, oregano, parsley, thyme and crushed red pepper; cook for 1 minute stirring constantly.

In a small bowl whisk the tomato paste with about 1/2 cup beef broth. Add the vegetable broth, remaining beef broth, fire roasted tomatoes and thinned out tomato paste.  Increase the heat to medium low and simmer for 3-4 minutes.

Add the cheese tortellini and simmer for 10-15 minutes or until the tortellinis are cooked to your desired tenderness.  Remove the pan from the heat and stir in the arugula.  Add salt and pepper to taste.  Sprinkle each bowl with 1-2 tablespoon freshly grated Parmesan cheese.

Oh my word!  I made this for dinner last night and it was AMAZING!!  I added some garlic powder and about 1.5 tsp of Balsamic vinegar to mine as well.  My boyfriend was blown away by how GOOD it was!  This is going to become a staple menu item in my house!

Simple and delicious! I used lo sodium Better than Bouillon rather than box or can broth and frozen tortellini because the grocery store I went to didn't have the fresh. Also a mixer of arugula and spinach. This one is a keeper!

Just made this soup, not only was it wallet friendly but was easy to make when time was restricted. This soup was delicious, I recommended it to several of my friends. I did tweak 2 things, I substituted the Italian sausage for chicken sausage and the arugula for spinach!

This was delicious! I used spinach, cheese tortellini, and extra red pepper for an extra kick. 
Left overs were just as delicious if not better, if that’s even possible. Served with garlic bread, that’s all that was needed. It’s a keeper that’s for sure. Thanks for sharing!

all-purpose flour

can diced tomatoes

tomato sauce

Italian Seasoning

salt and black pepper (to taste)

cheese tortellini ((the refrigerated kind))

parmesan cheese

spinach leaves ((packed))

heavy cream (or half and half)

basil leaves (, chopped)

Add oil and butter to a large saucepan over medium heat. Once melted, add the onion and cook, stirring occasionally, 5 minutes.

Add the garlic. Stir in the flour and cook for another minute.

Add the vegetable broth, diced tomatoes, tomato sauce, Italian seasoning, and dried basil. Season with salt and pepper. Taste broth and adjust seasonings if needed.

Bring mixture to a gentle boil and then add the tortellini. Cook for a few minutes, until tortellini are tender.

Remove from heat and stir in spinach, parmesan cheese, and cream.

Add chopped basil. Serve warm.

Yellow Onion (diced)

Celery (Sliced)

Carrots

Red Bell Pepper (Seeded and chopped)

Black Pepper (Fresh ground)

Low Sodium Chicken Stock

Cheese Tortellini (about 4 cups depending on the size of your tortellini)

Baby Spinach (fresh, stems removed)

Heavy Cream

Parmesan Cheese (shredded for garnish if you like)

Heat 1 Tbsp Olive Oil in a large Dutch oven or heavy pot over medium heat. Add 1 cup Yellow Onion, 1/2 cup Celery, and 3 Carrots cooking about 5 minutes. Add the 1 Red Bell Pepper. Continue cooking until the onions and peppers are soft.

Reduce the heat to low and add the 2 cloves Garlic, 1 tsp Basil, 1/2 teaspoon Oregano, and ¼ teaspoon Black Pepper, cooking for 1 minute while stirring constantly.

Add 6 cups Low Sodium Chicken Stock and bring it to a good simmer. Add 15 ounces Cheese Tortellini and 2 ½ cups Cooked chicken. Cook until the carrots are tender, and the tortellini are cooked through. About 5 minutes or what the package of tortellini says.

Add 4 cups Baby Spinach and cook for 1-2 minutes or until wilted. Remove from the heat and stir in 1/3 cup Heavy Cream.  Season with salt and pepper to taste.

I used lobster ravioli and changed the spinach to swiss chard but still really good!
