This mini corn casserole is filled with sweet corn plus onions, garlic, bacon, and cheese. It&#039;s a &quot;jazzed&quot; up version of a classic dish made without Jiffy mix!

Heat the oven to 350°F (177°C). Lightly butter a small baking dish and set the dish aside.Pro Tip: Use a 5x5-inch baking dish that has a base area of 25 square inches. You can also use a 4x6-inch baking dish with a base area of 24 square inches or a 6x6-inch dish which will yield a thinner corn casserole that may bake faster.

In a small skillet over medium heat, fry the bacon until crisp. Remove from the pan and transfer to a paper-towel-lined plate. Crumble the bacon when it is cool enough to handle.Pro Tip: If the bacon does not produce enough grease, add ½ tablespoon of olive oil to the pan to prevent the bacon from sticking to the pan.

Add the onions to the bacon drippings in the pan and cook, stirring occasionally until the onions are translucent, about 2 minutes.

Add the garlic and cook, stirring frequently for 30 seconds. Remove the pan from the heat and set it aside.

In a medium-sized bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

In a separate medium-sized bowl, whisk the egg yolk, sour cream, milk, and melted butter together.

Stir in the corn, the crumbled bacon, and the onion and garlic mixture.

Add in the dry ingredients and stir until combined.

Pour the batter into the greased baking dish and place the baking dish on a rimmed baking sheet to catch any possible spills. Bake for 30 minutes.

Remove the baked corn casserole from the oven and top with the shredded cheese.

Bake for an additional 5 minutes more. Top with chopped green onions and enjoy warm.

Slow Cooker Cheesy Corn Casserole

oz sweet corn

mini sweet peppers, any color

jalapeno pepper, optional

panko breadcrumbs

flour

onion powder

heavy cream

oz pepper jack cheese, shredded

oz marble jack cheese, shredded

parmesan cheese

Add corn to slow cooker (a casserole style slow cooker works best for this recipe)

Remove ribs and seeds from peppers and dice

Add peppers to corn in slow cooker and then add breadcrumbs, flour, sugar and seasonings and toss to coat evenly

Whisk together eggs and cream and pour over corn mixture

Stir in Pepper Jack and Marble Jack Cheeses

Top with Parmesan Cheese

Cover and cook on high for 2-3 hours or low for 4-6

If using an oven safe casserole slow cooker, you can transfer to oven (450 degrees) for 5 minutes or so at end of cooking time to brown up the cheese on the top

Preheat oven to 350 degrees.

In a medium bowl, stir together all ingredients until just combined.

Pour batter into greased 2 quart casserole dish.

If desired, add a bit more cheese to the top to form a crispy cheese crust on the top of the casserole.

Bake for 55-60 minutes or until golden brown.

Preheat oven to 325°F. Grease a 9x13 inch casserole dish.

Whisk eggs, milk, butter, sugar, onion, basil and salt and pepper together in bowl. Stir in corn, ½ cup cheese and ½ cup soda crackers.

Pour into casserole dish. Sprinkle with ½ cup soda crackers and ½ cup cheese.

Bake, uncovered, for 55 minutes. Serve hot.

Whole Kernel Corn (approximately 15 ounces, drained)

Jiffy Cornbread Mix (approximately 8.5 ounces)

Large Eggs

Shredded Cheddar Cheese

Butter (melted)

Cream Cheese (softened)

Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.

In a medium size mixing bowl, beat together the butter and softened cream cheese until combined.

Hand stir in the creamed corn, drained corn, Jiffy cornbread mix, eggs and shredded cheese.

Pour the mixture into the baking dish.

Bake for 30-35 minutes until golden brown and the casserole is set.

Let sit for 5-10 minutes and then the casserole is ready to serve and enjoy!
