Cornbread is almost always the perfect wingman for soup.

Cheddar Cornbread

½ cup (1 stick) unsalted butter

all-purpose flour

yellow cornmeal

baking powder

sugar

salt

cayenne pepper (to taste)

cheddar cheese (plus ½ cup for sprinkling)

eggs

buttermilk

Preheat the oven to 400°F.  Place the butter in 12-inch cast iron skillet and put the pan in the oven until the butter melts and is starting to lightly brown.

Meanwhile, in a large bowl whisk together the flour, cornmeal, baking powder, sugar, salt and cayenne.  Stir in 1 cup of the shredded cheese.  In another smaller bowl use a fork to stir the eggs with the buttermilk.

When the butter is melted, twirl the pan a bit so that the butter coats the sides as well as the bottom, then pour almost all of it, except for a couple of tablespoons, into the buttermilk mixture and stir quickly to combine.  Whisk the buttermilk mixture into the flour mixture, just until combined.  Scrape the mixture into the hot butter-coated pan, smooth the top, and sprinkle over the remaining 1/2 cup shredded cheese.

Bake for 22 to 25 minutes, until a wooden skewer or a toothpick inserted into the center comes out clean, and the cornbread just starts to pull away from the outside of the pan.  Cool in the pan on a wire rack, until warm or room temperature.  Serve in squares or wedges with your favorite Garden Fresh Gourmet soup.

Cheesy Cornbread is loaded with jalapenos, sour cream, and cheese and is topped with a homemade honey butter.

Cheesy Cornbread

cornbread mix ((I used Marie Callenders))

sour cream

water

onions (chopped)

jalapenos chilies

cheddar cheese (shredded)

butter

honey

Preheat oven to 350 degrees and spray an 8x8 baking dish with non-stick cooking spray. Set aside.

In a large bowl, add cornbread mix.

Using a small bowl, stir sour cream, water, egg, onions, and jalapenos together until combined.

Pour sour cream mixture into large bowl with cornbread mix. Stir to combine.

Add 1 ⅔ cup of cheese into mixture. Stir.

Spoon batter into prepared baking dish.

Top with remaining cheese.

Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

For the Cheesy Cornbread

In a small mixing bowl, using an electric mixer on high speed, beat butter and honey together until smooth and fluffy.

oil ((mild flavored

white cornmeal (fine ground)

butter (melted)

milk

kernel corn (frozen, fresh or canned)

extra sharp cheese (grated)

green chiles (lightly drained)

Put two tablespoons of cooking oil in a 10-inch cast iron skillet. Put the skillet in the oven and turn the oven on to preheat to 400.

Add all ingredients to a large mixing bowl. Stir together until thoroughly combined.

When oven has reached 400 degrees, carefully remove the pan from the oven and quickly pour the cornbread mixture into the hot oil. Return the pan immediately to the oven.

Bake for 30 minutes or until the top is golden brown.

Spray an 8 by 8 inch pan with nonstick spray.

In a large bowl combine all ingredients and stir well to blend.

Bake for 30 minutes or until golden brown and a toothpick inserted in the middle comes out clean.

Cooked it an extra 5 minutes.  It was soup!

2 eggs

2/3 cup milk
10 ounce can Rotel
1 cup corn (canned or frozen, thawed)
1 1/2 cup shredded Mexican cheese
